Sweet Butter Love with Kerrygold

When I was offered a chance to try a couple of new products from Kerrygold I jumped at it!  I would like to issue a warning here that one of the products is a reduced fat butter.  This would be a first for me and no one will be more surprised than my Mom.  Hi Mom!  Last time my folks came to visit, my Mom brought her own butter-like spread.  I told her it would still be here next time she comes to visit, because I won’t eat that stuff!

Next time I will have something delicious to offer her in place of my normal fat laden butter.  You see Kerrygold, has a new Reduced Fat Butter with less sodium and they are also bringing out a new Naturally Softer Butter.  This stuff is good enough to just eat with a spoon. Not that I would really do that, well maybe just a little taste.

I got in the kitchen and got a little creative with the new Kerrygold butters.  I really love compound butters but I rarely think to make them.  I made two different compound butters and now I have to admit to eating it right off of the spoon.  They will knock your socks off!  I made these and realized I needed biscuits! I whipped up a batch of buttermilk biscuits and talk about butter love.

You cannot beat the quality of Kerrygold products.  I have been a fan of their Dubliner cheese for a long time and just recently found their butter locally.  The lady at the grocery store must have thought I was a little crazy to be so excited over butter!

First up is the Cinnamon-Honey Fig Butter.  You must try this, I am so addicted that I didn’t even save any for the kids.  I did share with my husband; however, reluctantly! I promise you will never suspect that it’s made with reduced fat butter!

Cinnamon-Honey Fig Butter

Ingredients:

  • 1/2 cup Kerrygold Reduced Fat Butter
  • 1 tablespoon honey
  • 2 tablespoons dried figs, chopped small
  • 1/4 teaspoon Saigon cinnamon

Directions:

Place in a small bowl and stir until well combined.  Cover with plastic wrap  or in an airtight container and keep refrigerated until ready to serve.

*fabulous served with biscuits, toast, waffles, bagels or English muffins or right off of the spoon!

 Doesn’t that look scrumptious?

Next up we have Lemon Poppy Seed Butter.  Sweet and lemony with a great little crunch from the poppy seeds.  I just love lemon poppy seed muffins but I don’t always have time to make them.  Spread this on a biscuit or a piece of whole wheat toast and it’s like a little piece of breakfast heaven.

Lemon Poppy Seed Butter

Ingredients:

  • 1/2 cup Kerrygold Naturally Soft Butter
  • 1 teaspoon poppy seeds
  • 1 teaspoon lemon zest
  • 1 tablespoon brown sugar

Directions:

In a small bowl stir together all ingredients until well combined.  Cover with plastic wrap or in an airtight container  and refrigerate until ready to serve.

I know you will enjoy these compound butters and believe me when I tell you the new Kerrygold butters are every bit as delicious as I claim.

Santa Fe Roasted Red Pepper Dip

Football season is upon us, and game day food is a must.  I have a super quick dip for you that will knock your socks off.  Roasted red peppers with cumin and a hint of cilantro for a new twist on the classic Tex-Mex dip flavors.  This would also be a great addition to tacos and I’m thinking of trying it with grilled chicken.  Many possibilities!

I am still running in circles, but I have some exciting things coming up in the next few weeks along with some great giveaways!

I was chosen to be part of Emeril’s One-Pot Blogger Cooking Party to to celebrate the release of Emeril Lagasse’s upcoming book Sizzling Skillets and Other One-Pot Wonders.

Santa Fe Roasted Red Pepper Dip

Ingredients:

1/2 cup mayonnaise

1/2 cup sour cream

1/2 cup roasted red pepper

1/4 cup cilantro

1 tablespoon diced  green onion (white parts only, save green parts for a garnish)

1 teaspoon fresh lemon juice

Dash hot sauce

1/2 teaspoon granulated garlic

1 teaspoon ground cumin

1/2 teaspoon salt

Directions:

Add all ingredients into a food processor or blender and process for 30 seconds, remove lid and scrape down sides.  Continue to process for 1 minute.  Pour into serving bowl, garnish with green onion tops.  Cover and refrigerate for at least 30 minutes for flavors to meld.  Serve with tortilla chips, tacos, or burritos.
