How to make the best Chicken Noodle Soup

I’m going to show you just how easy it is to make. Even though I love to open a can of soup for something quick, this homemade version is almost as easy and it is going to knock your socks off. 

What makes this recipe easy? It uses leftover chicken or turkey or you can just pick up a rotisserie chicken from the deli. You can have this on the dinner table in about 30 minutes.

I’ve made this with our Smoked Whole Chicken and leftover Smoked Turkey, both are divine. 

Old Fashioned Chicken Noodle Soup

How to Make Easy Chicken Noodle Soup:

  1. Shred chicken or turkey and set aside. 
  2. Add olive oil to a Dutch oven and place over medium heat. 
  3. Add diced onion, carrots, celery and minced garlic. 
  4. Cook for 5 minutes, stirring often or until softened. 
  5. Season with salt and pepper and add bay leaf. 
  6. Stir in chicken broth, raise heat to high and bring to a boil.
  7. Add Amish or Egg Noodles and chicken or turkey. 
  8. Cook 8-10 minutes or until noodles are tender. 
  9. Remove bay leaf.
  10. Serve immediately.

What can you add to chicken noodle soup to make it taste better?

When you start your soup with onions, carrots, celery and garlic you get a ton of flavor. It makes it taste just like old fashioned chicken noodle soup. Homemade chicken broth is wonderful addition but I usually only have store bought on hand and works just fine for this easy recipe.

What are the best herbs for chicken noodle soup?

Garlic is my must-have for chicken noodle soup and in this recipe I added a bay leaf. Thyme, rosemary and basil are also great options. Fresh or dried herbs will work well to add more flavor to your homemade chicken noodle soup.

Ingredients

  • 2 tablespoons olive oil

  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh ground pepper

  • 3 cups whole milk
  • 16 oz Amish noodles or egg noodles
  • 8 ounces of shredded chicken or turkey
