Ingredients for Frito Corn Salad
  • Canned Sweet Corn, frozen corn or fresh corn can be used.
  • Bell Peppers – green bell pepper or red bell pepper
  • Red Onion
  • Shredded Cheddar Cheese (sharp cheddar, colby jack cheese or pepper jack)
  • Mayonnaise
  • Fritos Corn Chips – The Chili Cheese Fritos Corn Chips are my favorite but either will work.

How to Make Frito Corn Salad

  1. Drain corn well and add to a bowl with diced bell pepper, diced onion, shredded cheese and mayonnaise.

  1. Stir together, cover and refrigerate one hour or overnight.

  1. Just before serving, add about 1/2 of the bag of crushed Fritos. Stir and serve immediately. Fritos can also be added as the salad is plated if you are not serving a crowd. A good idea if you don’t think you’ll eat it all in one sitting. The Fritos will be soggy if refrigerated.

  • Feed a Crowd: This easy frito corn salad recipe can be doubled as needed.
  • Makes a Great Dip: Serve this corn salad with Fritos Scoops or tortilla chips.
  • Frozen Corn: If you are using frozen corn, thaw by running under cool water until corn kernels are no longer frozen, drain well.
  • Variations: If you aren’t a fan of mayonnaise, substitute half or all of it with sour cream.
  • Add-Ins: Sliced green onions, rinsed and drained black beans, green chiles, or candied jalapeños are great additions to give it a little kick.
  • Storage: Store corn salad in an airtight container or covered in plastic wrap in the refrigerator for up to 3 days. Add crushed Fritos before serving.

Ingredients

  • 1 can whole kernel sweet corn (15 ounces)
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red onion
  • 1/2 cup mayonnaise
  • 1 cup shredded cheese (sharp cheddar, colby-jack, or pepper jack)
  • 5 ounces crushed Chili Cheese Fritos

Instructions

  1. Drain corn and add to a medium size bowl.
  2. Mix in bell peppers, red onion, mayonnaise and cheese.
  3. Cover and refrigerate at least an hour or overnight.
  4. Mix in crushed Fritos just before serving.

    1. We can’t find chili cheese Fritos. Would regular Fritos work in a pinch? Ps-all your recipes from here & outgrilling.com that we have tried have turned out awesome!
