This salad is a great compliment to so many dinners. We served it with fried fish and hushpuppies and it was out of this world. It would also be great with bbq burgers, grilled bbq chicken or brisket tacos.

Side dishes are not my strong suit and honestly most of the time my family is happy with just meat and potatoes but this corn salad is so easy that I will be making it all the time.

Quick and Easy Side Dishes

I was reading all about candied jalapeño pimento cheese on my friend Kelly’s site, The Meaning of Pie and she mentioned this Frito Corn Salad. I copied the ingredients down and picked up some Fritos on my trip to the store the next day. It was an immediate hit at our house. I’ll be trying her pimento cheese on a smoked brisket sandwich asap!

    1. Hi Tammie,
Regular Fritos work just fine, just don’t add them until you are ready to serve. Thanks so much for the kind words on our recipes, that really makes our day!
