How to Make Easy Tortellini Soup:
- Brown Italian sausage in a Dutch oven or Braiser.
- Add minced garlic and diced red pepper.
- Pour in chicken broth and bring to a boil.
- Stir in tortellini and cook for 5 minutes.
- Add spinach, cook for 5 minutes, stirring often.
- Mix cream or milk with cornstarch and whisk into soup.
- Continue to stir until soup has thickened slightly.
- Sprinkle with red pepper flakes if desired.

- 1 pound Italian Sausage
- 4 garlic cloves, minced
- ½ cup diced sweet red pepper
- 4 cups chicken broth
- 1 16 ounce package refrigerated or frozen tortellini
- 4 oz fresh spinach, coarsely chopped
- 1 cup heavy cream or whole milk
- 2 tablespoons cornstarch
- ½ teaspoon red pepper flakes, optional
