This winter chill has me craving soup like crazy. We’ve been having Italian Gnocchi Soup and My Mom’s Homemade Chicken & Dumplings on a regular rotation and this Easy Tortellini Soup with sausage and spinach is always a favorite.

Ingredients Needed For Creamy Tortellini Soup Recipe

  • Sweet Italian Sausage or hot Italian Sausage if you want a spicy soup.
  • Fresh Garlic
  • Sweet Red Pepper
  • Chicken Broth
  • Refrigerated or Frozen Cheese-Filled Tortellini
  • Fresh Baby Spinach
  • Heavy Cream or Whole Milk
  • Corn Starch
  • Red pepper flakes, optional

Step-By-Step Directions for Easy Tortellini Soup

  1. Brown Italian sausage in a Dutch oven or a Large Pot.
  2. Add minced garlic and diced red pepper, cook 5 minutes.
  3. Pour in chicken broth and bring to a boil.
  4. Stir in tortellini and cook for 5 minutes. 
  5. Add spinach, cook for 5 minutes, stirring often. 
  6. Add minced garlic and diced red pepper, cook for 5 minutes, stirring often.
  7. Continue to stir until soup has thickened slightly. 
  8. Sprinkle with red pepper flakes if desired.

  • 1 pound sweet Italian Sausage
  • 4 garlic cloves, minced
  • 1/2 cup diced sweet red pepper
  • 4 cups chicken broth
  • 1 16 ounce package refrigerated or frozen cheese tortellini
  • 4 oz fresh baby spinach, coarsely chopped
  • 1 cup heavy cream or whole milk
  • 2 tablespoons corn starch
  • 1/2 teaspoon red pepper flakes, optional

Instructions

  1. Brown Italian sausage in a Dutch oven or large soup pot.
  2. Add minced garlic and diced red pepper, cook 5 minutes.
  3. Stir in chicken broth and bring to a boil.
  4. Next, add tortellini and cook for 5 minutes. 
  5. Add spinach, cook for 5 minutes, stirring often. 
  6. Mix cream or milk with corn starch and whisk into soup.
  7. Continue to stir until soup has slightly thickened. 
  8. Sprinkle with red pepper flakes if desired.
