Meatball Soup
Meatball Soup is a hearty and delicious dinner to warm you up on a cold night. Filled with grilled meatballs, vegetables and pasta in a tomato broth.
Soups are a weeknight staple at our house especially when it’s cold. Nothing warms you up like a steaming bowl of Homemade Chicken Noodle Soup and my kids love this Tuscan Potato Soup when the weather is freezing.
Meatball Soup ~ Hearty and Delicious Soup Recipe
Soup is one of my favorite meals to make because it’s so versatile. The perfect dish to make with whatever you have on hand and a great way to use up leftover vegetables.
If you are grilling over the weekend, throw some meatballs on the grill and have them on hand to make this delicious meatballs soup!
Ingredients Needed:
For the Meatballs:
- Ground Beef
- Minced Garlic
- Onion Flakes
- Dried Thyme
- Ground Rosemary
- Black Pepper
- Kosher Salt
- Ground Red Pepper
For the Soup:
- Olive Oil
- Onions
- Bell Peppers
- Carrot
- Garlic
- Potatoes
- Beef Broth
- Tomato Sauce
- Water
- Pasta
How to Make Meatball Soup:
- Prepare a grill fire to about 300° using hickory for smoke flavor.
Make the meatballs:
- Add ground beef to a bowl.
- Mix spices together.
- Combine ground beef and spices.
- Scoop into teaspoon sized meatballs.
- Place on a grill pan.
- Cook meatballs over indirect heat with the grill closed for about 15- 20 minutes.
- Test meatballs with a digital thermometer, cooking until meatballs reach 165°.
- Remove from grill and set aside.
For the Soup:
- Add olive oil to a dutch oven or soup pan with diced onions and bell peppers.
- Cook over medium heat about 2 minutes, stir in carrots, garlic and diced potatoes.
- Continue to cook about 8 – 10 minutes, stirring occasionally until vegetables start to soften.
- Add tomato sauce, beef broth and water. Bring mixture to a boil.
- Add grilled meatballs.
- Stir in pasta, we used homemade but any store bought variety will work just fine.
- Cook for about 10- 15 minutes until pasta is cooked through.
- Garnish with parsley and serve immediately.
How to Store and Reheat:
- Store leftover soup in an airtight container (these are my favorite deli containers for leftovers) in the refrigerator up to 3 days.
- Soup can be frozen up to 3 months.
- Reheat in a saucepan over medium heat, stirring occasionally, about 8 – 10 minutes.
Recipe Variations:
If you can’t grill the meatballs, you will miss out on that amazing grilled flavor but they can be baked at 400° on a lined baking sheet for 15 minutes.
Use any vegetables that you have on hand. Soup is a wonderful opportunity to use up leftover bits from the refrigerator!
For the pasta, we used some homemade pasta we had left from making smoked turkey and dumplings. Any dried pasta will work.
What to Serve with Soup:
A simple green salad or go all out with a Greek Salad to serve with any soup.
Crusty Garlic Bread, a batch of breadsticks, cornbread or our Jalapeño Cheddar Cornbread are also favorites to serve with soup.

Ingredients
for the meatballs
- 1 pound lean ground beef
- 1 tablespoon granulated garlic
- 1 tablespoon onion flakes
- 1 tablespoon dried thyme
- 1 teaspoon ground rosemary
- 2 teaspoons kosher salt
- 2 teaspoons black pepper
- 1/8 teaspoon ground red pepper
for the soup:
- 3 tablespoons olive oil
- 2 cups diced onions
- 2 cups diced bell peppers
- 2 cloves garlic, minced
- 1 small carrot, diced
- 2 cups russet potatoes, peeled and diced
- 2 cups beef broth
- 2 cups tomato sauce
- 3 cups water
- 1 1/2 cups pasta (Orecchiette, macaroni or shells)
- fresh parsley for garnish
Instructions
- Prepare the grill to about 300° with hickory for smoke flavor.
- Mix granulated garlic, onion flakes, thyme, rosemary, salt, pepper and red pepper together.
- Add ground beef to a bowl and mix with spices.
- Make teaspoon sized meatballs and place on a grill pan.
- Cook over indirect fire with the grill closed for about 15 minutes or until internal temperature reaches 165°.
