Creamy Cucumber Tomato Salad

Creamy Cucumber Tomato Salad is a quick and easy side dish to add to any meal. Crispy cucumbers, ripe tomatoes and red onion all in a creamy garlic and herb dressing. The ultimate summer side dish that is ready in about 10 minutes. Great to keep on hand for an easy lunch too!

Tomatoes are hands down, my favorite thing that we grow in our garden each summer and this simple salad is on of my favorite ways to enjoy those ripe, juicy tomatoes!

Summer gardening is a ton of work but I enjoy it so much. It’s a great way to get me out of the house and the fresh vegetables are so enjoyable. If you aren’t gardening, pick up some fresh vegetables from the farmers market or add it to your grocery pick up and make this salad soon!

How to Make Creamy Cucumber Tomato Salad:

Cut up tomatoes, red onions sliced and sliced cucumbers in a bowl, fresh herbs below

  • Slice cucumbers into thin slices. Remove core of tomatoes and cut into bite-sized pieces. Slice onion, thin. Place all in a serving bowl.

Ingredients for creamy salad dressing: mayonnaise, sour cream, garlic, salt and pepper plus fresh herbs

  • For the dressing you just need mayonnaise, sour cream, salt, pepper and garlic plus some fresh herbs. 

Creamy Salad Dressing for tomato and cucumbers

  • Combine the dressing ingredients in a separate bowl with a whisk.

  • Pour over vegetables and stir to mix well. The dressing will seem thick but when it combines with the juicy tomatoes, it’s just perfect.

  • Salad can be served immediately or covered and chilled for one hour. 

Store leftovers in an airtight container in refrigerator. Best if served within 2 – 3 days.

It really doesn’t get any easier than this cool and creamy salad. Serve it with grilled burgers, beef rigatoni or fried chicken strips. It really goes with everything and it’s a great side dish for cookouts and potlucks.

Ingredients

  • 3 tomatoes, medium sized
  • 2 cucumbers, medium sized
  • 1 small red onion
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1 tablespoon fresh herbs (parsley, dill or thyme)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon granulated garlic

Instructions

  1. Core tomatoes and cut into bite-size pieces.
  2. Slice cumbers thin.
  3. Slice onion thin.
  4. Finely chop the herbs.
  5. Combine vegetables in a serving bowl.
  6. In a separate bowl, combine mayonnaise, sour cream, salt, pepper, garlic and fresh herbs. Pour over tomatoes and cucumbers and mix well.
  7. Salad can be served immediately or covered and chilled for one hour.

Notes

  1. This is the easiest, most freshest tasting salad ever! I will probably be eating this every week. Great mix of flavors, nothing overwhelming, smooth and creamy. Thanks for this recipe!
