Pineapple Cucumber Salad
This Pineapple Cucumber Salad is a refreshing side that goes with any dinner! It’s super simple with just 6 ingredients that you can put together in less than 10 minutes making it a great for summer!
Pineapple Cucumber Salad
I bought my husband a new grill for his birthday last week and we’ve been grilling it up almost every night. He is the grill master around our house and I am reaping the delicious rewards.
We grilled burgers the other night when all of the kids were around and I made this Pineapple Cucumber Salad to go alongside.
I’ve actually been meaning to make a version of this salad for at least a month. The inspiration came from an issue of Eating Well.
It combined pineapple and avocado and based on my love of my Pineapple Pico de Gallo Avocado Toasts, I knew it was a winning combination.
So I bought the ingredients and the avocados weren’t yet ripe then they were too ripe. And repeat. I did this about three times. I finally decided to give it a whirl with cucumber instead of avocado. Weird substitution right?
Well it worked, and I really liked the crunch that the cucumbers added to the pineapple. I loved it. Actually all of the gals liked and I couldn’t even talk the guys into trying it.
They just had another burger. I will definitely be adding this to the summer rotation and maybe I can eventually get the guys to at least try it! We also love this Thai Cucumber Salad with burgers and you can’t go wrong with the make ahead Cucumber and Onion Salad!
The dressing is simply olive oil, lime juice and a little kosher salt. I think a little fresh mint would be a great addition to this too. I hope you will give this a try. It’s a great addition to brunch or for your next cookout.
We are finally getting close to planting our garden but of course it’s going to rain 4 to 6 inches this weekend. So I’m actually glad we have planted it just yet.
Emmet is so excited to grow watermelons and cantaloupe. If you have watermelon on hand, we love this Easy Watermelon Salad! It has strawberries, pineapple, feta cheese and the same lime dressing. So refreshing and delicious.
We grew a few watermelons year before last and they were so sweet and so good. I just need to get my hands on some black diamond watermelon seeds, they are my favorite from childhood.
We will have to plant lots of tomatoes, squash, cucumbers and peppers. Plus all of the herbs, I’m so excited for a real Oklahoma garden. We will have so many salads, well the gals will anyway.
You will want to add this summer fresh salad to all of your party menus for summer and don’t forget the Pineapple Margaritas if you are as big of a pineapple fan as I am!

Pineapple Cucumber Salad
Ingredients
- 1/4 cup thin sliced red onion rings
- 1 fresh pineapple
- 1 cucumber
- 1/4 cup olive oil
- 1 tablespoon fresh lime juice
- 1/4 teaspoon kosher salt
Instructions
- Submerse red onions in ice water for about 10 minutes.
- Peel and core pineapple. Cut into bite- sized chunks. Slice cucumber thinly and cut in half.
- Drain onions and pat dry and dice.
- Add olive oil, lime juice and salt to a bowl and whisk to combine. Add in pineapple, cucumbers and red onion and toss to coat. Serve immediately.
Oh yes I’m making this today, and I have fresh mint to add too. Great recipe.

This sounds yummy! But when you say to submerge the onions in the ice water, is that the whole onion or after being sliced into rings?
