No Mayo Coleslaw ~ Vinegar Coleslaw
Homemade slaw is one of the quickest and easiest side dishes to add to your menu for just about any meal. It’s easy to make ahead and simple to make for a crowd. The tangy vinegar dressing is made with just a couple of pantry ingredients and makes the best vinegar slaw.
Ingredients Needed:
- Olive Oil
- Apple Cider Vinegar
- Sugar
- Granulated Garlic
- Onion Powder
- Kosher Salt
- Black Pepper
- Slaw Mix or Shredded Cabbage & Carrots
What is Slaw Mix?
Slaw mix is shredded cabbage and shredded carrots packaged in a plastic bag. Find it near the other bagged salads in the produce section of the grocery store. It’s a time saver that I often utilize for busy weeknights. Use a head of cabbage and whole carrots and shred yourself if you prefer.
How to Make No Mayo Coleslaw:
- In a large bowl, add the olive oil, apple cider vinegar, sugar, garlic, onion powder, salt and pepper.
- Whisk together until well combined.
- Add slaw mix and stir until well coated with the dressing.
- Serve immediately or cover and chill until ready to serve.
Recipe Notes:
- Yield: 6 Servings
- To Use a Head of Cabbage & Whole Carrots: 8 cups of shredded cabbage and one medium carrot, shredded is the same as the bag of slaw mix.
- Additional Add Ins: Add some crunch by adding diced celery or apples. Toasted walnuts or pecans add great flavor and crunch.
- Storage: Store coleslaw in a covered container in the refrigerator up to 3 days, stir before serving.
More Easy Side Salads to Try:
- Sweet Coleslaw If you love the slaw from KFC, this easy side will be your go-to salad.

Thank you so much for sharing this amazing recipe! Will surely have this again! It’s really easy to make and it tasted so delicious! Highly recommended!
I wonder how this will taste if the olive oil and vinegar are heated and then poured over the slaw? I once made a slaw like this but lost recipe. also added celery seeds. Hubby loved it.
I’ve never tried that but it sounds delicious. Let me know if you try it.

Gyahd awful. Too salty. Too peppery. Had to rinse off my cabbage and start over
Hi Frances,
I am sorry to hear you didn’t enjoy this slaw. You might like our creamy version better.

Learned to add less salt and pepper, taste, and season to your liking. Everyone has different tolerance for both. The cole slaw is delicious when you learn this. Harsh comments like this are unnecessary. Be kind.
This is a wonderful alternative to a mayonnaise-based coleslaw. We have a family member who cannot eat commercial mayonnaise, but can now enjoy coleslaw again, thanks to your recipe! Everyone in our family enjoyed it. Thanks for sharing this!
Hi Kari,
So glad y’all enjoyed it. Thanks for stopping by.
