Slow simmered beef stew has wonderful flavor in every bite. Serve it up with a pan of skillet cornbread or crackers for a very satisfying meal.
What is Beef Stew Meat?
Beef stew meat is generally made from chuck or round cuts that are cut into cubes. You can always cut up your own chuck roast for stew if you don’t have stew meat on hand. It’s a budget friendly cut that is best slow cooked.
How to Make Beef Stew:
- Add olive oil to a dutch oven or large soup pan and place over medium heat.
- Toss stew meat with flour, salt and pepper and add to pan.
- Cook, stirring occasionally until beef is browned. Remove from pan and set aside.
- Add carrots, onions and celery to the pan, adding additional olive oil if needed.
- Cook until onions become translucent, about 8- 10 minutes.
- Add beef broth, browned stew meat and potatoes, stirring well. Place a bay leaf into the mixture, cover and cook 10 minutes on medium heat. Lower to simmer and cook for 1 1/2 hours, stirring occasionally.
- Add salt and pepper to taste. Remove bay leaf and serve immediately.
Tips for Making the Best Beef Stew:
- Tossing your stew meat with seasoned flour and browning it will create the flavor base for your stew. The flour will also help thicken the gravy for your stew.
- Your stew will thicken as it cooks. If you would like a thicker stew, make a slurry of equal parts water and cornstarch or flour. Whisk into gravy and continue whisking until thickened.
- If your stew becomes too thick, whisk in additional beef broth or water.
- Make sure you remove the bay leaf, which doesn’t soften during cooking and can cause discomfort or even scratching if swallowed. Don’t skip adding it though, it adds a great flavor to your stew.

- Add dry red wine in place of half of the broth for a rich wine gravy.

Ingredients
- 3 tablespoons olive oil
- 1 1/2 pounds beef stew meat
- 2 tablespoons all purpose flour
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 onion, diced
- 1 cup thinly sliced carrots
- 2 celery stalks, thinly sliced
- 4 cups beef broth
- 1 1/2 pounds potatoes, peeled and diced
- 1 bay leaf
Instructions
- Place a dutch oven or large soup pan over medium heat and add olive oil.
- Add stew meat to a bowl and toss with flour, salt and pepper.
- Pour floured stew meat to pan. Brown meat on all sides, stirring occasionally. Remove to a bowl and set aside.
- Stir in carrots, onions and celery to the pan, adding additional olive oil if needed. Stir often, cooking about 8 -10 minutes until vegetables are softened.
- Whisk in beef broth and add in browned stew meat and potatoes.
- Add a bay leaf to stew, cover and cook 10 minutes on medium heat.
- Lower to simmer and cook for 1 1/2 hours, stirring occasionally.
- Add salt and pepper to taste. Remove bay leaf and serve immediately.
