Turkey Noodle Soup

Turkey Noodle Soup is a classic meal that is so comforting and delicious. Perfect for that leftover Thanksgiving turkey! This hearty soup is filled with smoked turkey, loads of vegetables and homestyle noodles in a delicious broth. 

We love smoked turkey and actually make it throughout the year. It makes the best turkey club sandwiches or turkey salad and we also love Smoked Turkey and Dumplings and turkey noodle soup!

Ingredients for Turkey Noodle Soup:

  • Onion
  • Celery
  • Carrots
  • Bell Pepper
  • Olive Oil
  • Turkey Stock
  • Granulated Garlic
  • Salt & Pepper

How to Make Turkey Noodle Soup:

  • Add diced vegetables and olive oil to a large pan and cook over medium heat. Add garlic, salt, pepper and chili flakes.

  • Bring to a boil and stir in turkey and noodles, stirring often.
  • Cook for 8 – 12 minutes or until noodles are cooked through.
  • Lower to simmer for about 15 minutes or until ready to serve.

How to Make Homestyle Noodles:

We often use Kluski noodles or Amish noodles but if we don’t have them on hand, it’s so easy to make homestyle noodles. You don’t need any special equipment. 

  • Mix all purpose flour with sugar and salt together in a bowl. Create a well in the center and mix in beaten eggs, milk and melted butter. 
  • Stir with a wooden spoon until combined and a dough ball forms.

  • Roll dough out into desired thickness. If dough is stiff, let is rest for about 5 or 10 minutes.

  • Cut into small strips using a pizza cutter.

  • Dust noodles with flour and let them dry for about 2 hours before adding to the soup.

What to Serve with Turkey Noodle Soup:

Soup is a meal all in one dish but we will often make a batch of buttermilk biscuits or skillet cornbread to serve with our favorite soups. This easy garlic bread is also a favorite and you can always add a green salad to serve on the side. 

How to Store and Reheat Turkey Noodle Soup:

Store soup in an airtight container in the refrigerator up to 4 days. 

Soup can be frozen for up to 3 months, thaw in refrigerator. 

Reheat soup in a pan over medium heat, stirring until heated through. Add additional broth or water if soup is too thick. 

Recipe Variations:

If you don’t have leftover turkey, chicken is also delicious in this soup and we love to add mushrooms for Chicken and Mushroom Soup.

Use the vegetables that you have on hand. Mushrooms are also a great addition.

Ingredients

  • 1 cup diced onion
  • 1 cup diced celery
  • 1 cup sliced carrots
  • 1 cup diced bell pepper
  • 3 tablespoons olive oil
  • 8 cups turkey stock
  • 1 tablespoon granulated garlic
  • 1 teaspoon salt 
  • 1 teaspoon pepper
  • Pinch chili flakes
  • 12 ounces homestyle noodles (homemade recipe below)
  • 2 cups diced smoked turkey

Instructions

  1. Add olive oil to a large soup pan and add onion, celery, carrots and bell peppers.
  2. Season with garlic, salt, pepper and chili flakes.
  3. Cook over medium heat, stirring often until vegetables are softened, about 8 - 10 minutes.
  4. Add stock, Bring to a boil.
  5. Add noodles and diced turkey, stirring to combine.
  6. Boil for about 8 - 12 minutes, until noodles are cooked through.
  7. Lower to simmer and cook about 10 -15 minutes or until ready to serve.

Notes

Store leftovers in an airtight container in the refrigerator up to 4 days. Freeze up to 3 months, thaw in refrigerator.

To reheat soup, add to a pan and stir in additional broth or water to thin. Cook over medium heat, stirring until warmed.

  • 2 teaspoons sugar
  • 1/4 teaspoon kosher salt
  • 2 eggs, beaten
  • 1/2 cup milk

Instructions

  1. In a bowl, combine flour, sugar and salt.
  2. Make a well in the center and add beaten eggs and milk.
  3. Mix well until a dough ball forms.
  4. Dust a clean surface with flour and roll dough into desired thickness. If dough is hard to roll, just let it rest for 10 - 15 minutes.
  5. Cut dough into thin strips with a pizza cutter.
  6. Dust noodles and allow to air dry about 2 hours before cooking.
