How to Make Peanut Butter Oatmeal Cookies:

  • Add softened butter, peanut butter and brown sugar to a mixing bowl and stir together.
  • Mix in egg and vanilla.
  • Add flour, oats and baking soda. Stir until well combined.

  • Scoop into 1 1/2 inch balls and roll in sugar.
  • Place on a parchment paper lined baking sheet about 2 inches apart.
  • Mash with a fork crosswise.

  • Remove to a cooling rack to cool completely.
  • Store cooled cookies in an airtight container up to 5 days.

This is a small batch and can be doubled if desired.

Ingredients

  • 1/2 cup softened butter
  • 1 cup peanut butter
  • 1 cup brown sugar
  • 2 large egg
  • 2 teaspoons vanilla extract
  • 1 1/4 cup all purpose flour
  • 1 cup old fashioned oats
  • 1 teaspoon baking soda
  • 1/3 cup sugar for rolling

Instructions

  • Preheat oven to 375°F.
  • Add butter, peanut butter and brown sugar to bowl and stir to combine.
  • Next, add eggs and vanilla, mixing until combined.
  • Add flour, oats and baking soda, mix well.
  • Pour 1/4 cup sugar to a small bowl.
  • Use a cookie scoop to form 1 1/4 inch dough balls.
  • Roll in sugar and place 2 inches apart on a greased or lined baking sheet.
  • Mash cookies with a fork crosswise.
  • Bake for 10-12 minutes or just until edges are lightly browned.
  • Cool cookies on a wire rack.
  • Store cooled cookies in an airtight container up to 5 days.
