How to Make Peanut Butter Oatmeal Cookies:

  • Add softened butter, peanut butter and brown sugar to a mixing bowl and stir together.
  • Mix in egg and vanilla.
  • Add flour, oats and baking soda. Stir until well combined.

  • Scoop into 1 1/2 inch balls and roll in sugar.
  • Place on a parchment paper lined baking sheet about 2 inches apart.
  • Mash with a fork crosswise.

  • Bake for 10-12 minutes or until edges are lightly browned.

  • Remove to a cooling rack to cool completely.
  • Store cooled cookies in an airtight container up to 5 days.

This is a small batch and can be doubled if desired.

Ingredients

  • 1/2 cup softened butter
  • 1 cup peanut butter
  • 1 cup brown sugar
  • 2 large egg
  • 2 teaspoons vanilla extract
  • 1 1/4 cup all purpose flour
  • 1 cup old fashioned oats
  • 1 teaspoon baking soda
  • 1/3 cup sugar for rolling

Instructions

  1. Preheat oven to 375°F.
  2. Add butter, peanut butter and brown sugar to bowl and stir to combine.
  3. Next, add eggs and vanilla, mixing until combined.
  4. Add flour, oats and baking soda, mix well.
  5. Pour 1/4 cup sugar to a small bowl.
  6. Use a cookie scoop to form 1 1/4 inch dough balls.
  7. Roll in sugar and place 2 inches apart on a greased or lined baking sheet.
  8. Mash cookies with a fork crosswise.
  9. Bake for 10-12 minutes or just until edges are lightly browned.
  10. Cool cookies on a wire rack.
  11. Store cooled cookies in an airtight container up to 5 days.
