Rocket Fuel Cocktail ~ Pineapple & Coconut Rum Cocktail

Rum cocktails are great to make at home and the Rocket Fuel Cocktail has all of your favorite flavors in a frozen cocktail that isn’t overly sweet.

Ingredients Needed:

  • Dark Rum
  • Amaretto
  • Coconut Cream
  • Pineapple Juice
  • Milk
  • Ice
  • White Rum
  • Pineapple Chunks ~ optional garnish
  • Maraschino Cherries ~ optional garnish

Recipe Notes and Variations:

  • Yield: 2 Cocktails ~ Double as needed.
  • Rum: We used Captain Morgan Black Spiced Rum and Bacardi White Rum. The original used 151 rum for the rocket fuel, which is no longer made by Bacardi. I think there are other brands of 151 rum but we just went with the white rum and it worked great.
  • Coconut Cream: I skimmed the thick coconut cream from the top of the coconut milk.

  • In a blender, combine dark rum, amaretto, coconut cream, pineapple juice, milk and ice.

  • Blend until smooth.

Ingredients

  • 2 ½ oz dark rum
  • 2 ½ oz amaretto
  • 1 oz coconut cream
  • 6 oz pineapple juice
  • 1 oz milk
  • Ice - about 2 cups
  • 2 oz white rum
  • pineapple chunks optional garnish
  • maraschino cherries optional garnish

Instructions

  • In a blender, combine dark rum, amaretto, coconut cream, pineapple juice, milk and ice. 
  • Blend until smooth.
  • Pour into cocktail glasses.
  • Slowly add the light rum.
