Ham and Cheddar Pasta Bake ~ Cheesy Pasta Casserole
A rich and creamy cheddar pasta sauce with chunks of smoky ham and pasta makes a tasty dinner that is really simple to make. Serve it up with a green salad and garlic bread for a complete meal.
Ingredients for Ham and Cheddar Pasta Bake:
- Ham
- Pasta ~ medium shells, macaroni or bow ties
- Butter
- Onion
- Minced Garlic
- All purpose flour
- Kosher salt
- Black pepper
- Milk
- Cream cheese
- Cheddar cheese
- Fresh thyme
How to Make Ham and Cheddar Pasta Bake:
- Cook pasta for 4 to 6 minutes in boiling water. Drain and set aside.
In a skillet melt 1 tablespoon butter in a skillet and cook onion over medium heat. Stir occasionally until onions start to caramelize. - In a saucepan, melt 2 tablespoons butte over medium heat. Cook minced garlic about 1 minute, whisk in flour, salt and pepper.
- Cook for about 2 minutes and whisk in milk and cream cheese. When cream cheese is melted and sauce starts to thicken, stir in shredded cheddar until melted and well combined. Remove from heat.
- Stir pasta, onions and cheese sauce together and add to a 9" x 13" baking pan. Bake for 20 minutes or until heated through.
- Garnish with fresh thyme and serve immediately.
Notes and Variations:
- Yield: 6 Servings
- Cheese Variations: Swiss cheese, Smoked Gouda or Colby Jack are also great options for this casserole.
- Store: Leftovers can be stored in an airtight container in the refrigerator up to 3 days.

- 1 pound medium shells pasta (or your favorite pasta)
- 3 tablespoons butter, divided use
- 1 medium- sized onion sliced thin
- 2 teaspoons minced garlic
- 2 tablespoons all purpose flour
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 2 cups whole milk
- 4 oz cream cheese, cut into 1 inch cubes
- 8 oz cheddar cheese, shredded
- 1 tablespoon fresh thyme
