Meal prep is huge these days and it’s no wonder, it’s time saving, money saving and just all around smart! I was pretty excited when I got the offer to review the Damn Delicious Meal Prep 115 Easy Recipes for Low-Calorie, High Energy Living cookbook by Chungah Rhee.

How to Make Freezer Breakfast Croissant Sandwiches:

  1. Start with bakery croissants, sliced deli ham and cheese. 
  2. Soft Scramble eggs in olive oil and season with salt and pepper. 
  3. Slice croissants and layer scrambled eggs, ham and cheese. 
  4. Wrap tightly with plastic wrap and freeze up to a month. 

How to Reheat Freezer Breakfast Sandwiches?

Remove plastic wrap from frozen sandwich and wrap up in a paper towel. 

Microwave: cook 1 to 2 minutes flipping half way through. 

Toaster Oven: Preheat to 350°, place on baking sheet and bake for 6-8 minutes.

I have been really interested in meal prep and this cookbook really put it all into perspective of how easy it can be! There’s also tips for cooking in bulk and lists of what tools you need and easy instructions for freezer meals.

What You Need for Meal Prep:

It has always been a challenge to get my kids to eat breakfast and I love these breakfast sandwiches to pack with them as they head out the door.

Since my guys are voracious eaters, I made these breakfast sandwiches with large croissants. If you are trying to cut back on calories and taking portion control into consideration, the mini croissants are the way to go. Either way, they are filling and delicious and my favorite to have on hand. 

I feel like super mom when I can be prepared with an easy breakfast without stressing. We are not morning people and I love anything that makes mornings easier. These Stuffed Waffles are easy too with just 3 ingredients!

Freezer Breakfast Croissant Sandwiches

Ingredients

  • 1 tablespoon olive oil
  • 4 large eggs lightly beaten
  • kosher salt
  • 4 large or 8 mini croissants halved horizontally
  • 4 ounces thinly sliced ham
  • 4 slices cheddar cheese

Instructions

  • Heat the olive oil in a large skillet over medium-high heat. Add the eggs and cook, stirring gently with a silicone spatula, until they just begin to set. Season with salt and pepper. Continue cooking until thickened and no visible liquid egg remains, 3 to 5 minutes.
  • Fill the croissants with the eggs, ham and cheese to make 4 large or 8 mini sandwiches. Wrap tightly in plastic wrap and freeze for up to 1 month.
  • To reheat, remove the plastic wrap from a frozen sandwich and wrap in paper towel. Microwave, flipping halfway, for 1 to 2 minutes, until heated through completely.
  • *Alternate heating method - preheat toaster oven to 350° and place sandwich on a baking sheet. Cook 8 minutes or until heated through.
