    Monster Breakfast Sandwich

    This could also be called the artery clogger, but I thought Monster sounded better, maybe, maybe not. Fried eggs, bacon, cheese, yeah it's good.  Okay, here's the story behind this sandwich.  I have been helping my husband with some manual labor.  I must say kudos to all those out there who endure hard manual labor everyday all day long (including my wonderful husband!!).  I enjoy it, but I am not used to it, being more of a computer nerd, pencil pusher type, therefore I whine, a lot!  With all of that whining and working I get really hungry. So for breakfast I made this huge sandwich to get me going and keep me going.  I've never had an avocado for breakfast before, but it was actually a real compliment to the fried eggs and of course it was a great creamy addition to the bacon.  I might be afraid to calculate calories here, but I didn't get hungry again until supper time.  It is huge but it is so filling. When my teenage son saw the picture, he insisted that I make him one for supper.  He loved it.   Arteries be danged, you gotta try this!

    Monster Breakfast Sandwich aka the artery clogger

    Yield: 2 sandwiches

    Ingredients:

    1 tablespoon butter

    4 eggs

    ½ teaspoon salt

    ¼ teaspoon pepper

    ½ cup Kerrygold Dubliner Cheese, shredded

    1 avocado, peeled, seeded and sliced

    ¼ teaspoon garlic salt

    4 slices bacon, cooked and cut in half

    4 slices whole wheat bread

    Mayonnaise: optional

    Cooking Directions:

    Melt butter in a skillet and add eggs, break yolks, season with salt and pepper and cook hard.  Meanwhile toast bread and spread with mayo, if desired.  Onto one piece of toast, layer 2 eggs and sprinkle with half of Dubliner cheese, 2 slices of bacon, and half of avocado and sprinkle with garlic salt, top with another piece of toast and cut in half diagonally.  Repeat for second sandwich.
