For the Sausage, Peppers & Onions:

We prepared the sausage, peppers and onions on the grill. It can also be cooked on the stovetop in a skillet.

  • For Grilling: Leave the sausage whole. Slice the peppers and onions and toss with olive oil. Grill at 350° with the grill closed for about 15- 20 minutes, turning the sausage and vegetables about half way through. Add hickory or pecan for smoke flavor.
  • Stovetop: Slice sausage and dice vegetables. Coat a large skillet with olive oil and place over medium heat. Cook sausage and vegetables, stirring often until vegetables are softened and start to caramelize, about 10 -15 minutes.
  • Remove the sausages, peppers and onions from the grill or skillet.
  • Slice the sausage into bite sized pieces, dice the onions and peppers.

  • Meanwhile, boil the pasta according to package directions and drain well.

  • To make the sauce, add cream cheese, milk and heavy cream to a saucepan. Add blackened seasoning and cook over medium heat, whisking until smooth and heated through.
  • Add parmesan cheese, whisk to combine.
  • Using the large pasta pan, add drained pasta, sausage, peppers and onions.

  • Pour the sauce over the top.
  • Mix well until thoroughly combined, cook about 2 minutes.
  • Remove from heat.

  • Garnish with parsley if desired and serve immediately.

  • Storage: Store in an airtight container in the refrigerator up to 4 days
  • Reheat: Reheat in a pan with 1- 2 tablespoons of milk. Cook over medium heat, stirring until heated through.

Ingredients

  • 1 pound andouille sausage store bought or homemade
  • 2 cups sliced bell peppers
  • 2 cups sliced yellow onion
  • 2 tablespoons olive oil
  • 16 ounces pasta Gemelli, Penne or Linguine
  • 8 ounces cream cheese
  • 1/2 cup whole milk
  • 1/2 cup heavy whipping cream
  • 1 tablespoon blackened seasoning
  • 1 teaspoon kosher salt
  • 1 cup shredded parmesan cheese
  • 1 tablespoon chopped parsley optional garnish
