The key to this 4 ingredient chicken soup is to use the best quality ingredients. We start with homemade chicken broth and use smoked chicken for this soup for the most flavor.

Ingredients Needed

Bowl of chicken broth, dried chives, chickpeas, chopped chicken.
  • Homemade Chicken Broth ~ Homemade is best but if you are using store bought, go for a quality bone broth.
  • Smoked Chicken ~ Use white or dark meat, this is a great recipe to use up leftovers from a smoked whole chicken.
  • Canned Chickpeas ~ Canned beans are one of our pantry staples for quick meals, if you have time to cook dried chickpeas, that works too.
  • Chives or Green Onions ~ Optional for garnish.

Additional Options:

  • Sautéed Vegetables: Carrots, celery, onions, bell peppers or mushrooms.
  • Pasta: Broken fettuccine, macaroni, orzo or diatlini.
  • Greens: Baby spinach, kale or chard.
  • Beans: If you don’t like chickpeas, navy beans or cannellini beans work well.
  • Herbs: Fresh or dried herbs will add delicious flavor. Thyme, basil and parsley are great additions.

Step By Step Directions

STEP 1 Heat chicken broth in a dutch oven or large pan over medium-high heat.

STEP 2 Add the diced chicken.

STEP 4 Cook for 15 minutes, stirring occasionally.
