Even if you are a beginner at baking breads with yeast, these rolls come together so simply. I am going to walk you through, step by step with my best tips and tricks for making homemade rolls.

How to Make Yeast Rolls:

Step by step photos for making yeast rolls

  • Add warm water to a large mixing bowl, about 95 – 100°. If you don’t have a thermometer, just run your hand under the water until it feels the same as your hand. 
  • Mix in one packet of yeast and sugar. Allow to stand 5-10 minutes or until yeast starts to bubble. 
  • Add oil into yeast mixture. 
  • Add one egg and mix to combine.

  • Stir in  2 cups of flour. 
  • Add kosher salt along with additional flour, 1 cup at a time. 
  • Dough should come together into a ball and pull away from the sides of the bowl when you have added about 4- 5 cups of flour. 
  • Turn dough out onto a floured surface, a large cutting board works great.

  • Knead dough with your hands, turning the dough over into itself about 3- 5 minutes, adding more flour 1/4 cup at a time as needed. Dough should be soft but no longer sticky. 

Dough rising for dinner rolls

  • Flour the board once more and shape dough into a ball. Cover with a flour sack towel and allow to rise one hour. A warm, draft- free place works great. Alternately, you can grease a clean bowl and place dough in the bowl, covered with plastic wrap to rise. 
  • When dough has doubled in size, punch down the dough to remove any air bubbles. Cut dough into 4 equal pieces. Shape the dough pieces into logs and cut into 4 pieces. 

How to shape dinner rolls

  • Shape into rolls by tucking sides under and rolling between your hands to form a smooth ball. Place on a greased baking sheet about 2 inches apart. Cover and allow to rise 30 minutes to one hour. 
  • Bake for 12- 15 minutes or until rolls are golden brown and cooked through.

  • Brush rolls with melted butter and serve immediately. 

The Best Way to Store and Reheat Yeast Rolls:

Leftover rolls may be stored in a zip top bag at room temperature for 1 day or up to 3 days in the refrigerator. 

To reheat rolls, place in a 325° oven for 10 minutes or until heated through. You can loosely cover with foil if to keep the rolls from browning too much.

Tips for Making Homemade Rolls:

  • The key to the best dinner rolls starts with good ingredients. I have the best luck using Red Star Yeast Platinum and King Arthur Flour. I generally have all purpose flour on hand but bread flour is also a great choice. 
  • Make sure your yeast is in date and not expired. 
  • Use a dough whisk to mix your yeast dough. 
  • Add flour a bit at a time, kneading before adding more. Adding too much flour will make your rolls tough.
  • If your rolls are hard to shape, let the dough rest for 5 minutes to allow the dough to relax. 
  • You can roll the dough out and use a biscuit cutter to shape the rolls if desired.  
  • Don’t rush the rising time. You will get the lightest, fluffiest rolls with 2 risings. It’s worth the extra time. 
  • Check your rolls at the earliest baking time to ensure they are not over browning. 
  • Brush your rolls with melted butter before baking for a darker, crisper crust.

Ingredients

  • 1 1/2 cups warm water 95° - 100°
  • 2 tablespoons sugar
  • 1 package 1/4 oz Red Star Yeast Platinum
  • 2 tablespoons vegetable oil
  • 1 egg
  • 5- 6 cups King Arthur all purpose flour
  • 1 teaspoon kosher salt
  • 2 tablespoons butter melted

Instructions

  • Add warm water to a large bowl and mix with sugar and yeast. Let stand 5- 10 minutes or until yeast starts to bubble.
  • Mix in vegetable oil and egg.
  • Add 2 cups of flour, mixing to combine.
  • Stir in kosher salt and additional flour 1 cup at a time until mixture comes together into a dough ball and pulls away from sides of the bowl.
  • Pour dough onto a floured surface.
  • Knead dough for 3- 5 minutes adding additional flour 1/2 cup at a time as needed.
  • Flour surface again and place dough over flour. Cover with a flour sack towel and set in a warm, draft-free place to rise for one hour or until dough has doubled in size.
  • Punch down dough to remove air bubbles. Flatten out dough and cut into 4 equal pieces.
  • Shape dough into logs and cut each into 4 pieces, forming 16 rolls.
  • Tuck sides of dough under and roll between palms to form rolls.
  • Place on a greased baking sheet about 2 inches apart. Cover and allow to rise 30 minutes to 1 hour.
  • Preheat oven to 375°.
  • Bake for 12-15 minutes or until rolls are golden brown and cooked through.
  • Brush rolls with melted butter and serve immediately.
