Roasted potatoes are one of my favorite side dishes because they are so easy. During the summer I just hate turning on the oven. So the air fryer is just the ticket for an easy side dish.
How to Make Air Fryer Roasted Potatoes:
- Cut larger potatoes into about 1 ½-2 inch chunks, you can leave smaller baby potatoes whole.
- Place in a large bowl and drizzle with olive oil. Add rosemary, garlic, salt and pepper and toss to coat well.
- Add potatoes to air fryer basket and spread evenly.
- Cook at 350° for 22-25 minutes, stir after about 10 minutes.
Oven Method for Roasted Potatoes:
If you don't have an air fryer, follow the same preparation and layer on a baking sheet. Bake at 400° for 35-40 minutes or until potatoes are cooked through.
Variations for Air Fryer Roasted Potatoes:
I used baby red potatoes from our garden. Russets or Yukon gold potatoes would also be delicious. You can scrub them and cook with the skins on or peel them if you prefer.
Use what ever herbs you have on hand. Fresh or dried, either is fine.

Should I Buy an Air Fryer?
I have to admit, I was pretty skeptical of air fryers. You know I'm big on deep fried foods like Southern Fried Shrimp, Fried Pickles, Fried Squash, Chicken Fried Steak Bites. My list of favorite fried foods is pretty long and I'll be adapting these recipe for the air fryer soon!
I told my parents that they didn't need an air fryer, that their convection oven would do the same thing. That is until I got an air fryer.

The cleanup is a snap. So much less of a mess than deep frying. Nothing sticks to the basket. I just hand wash after each use.
