Tips for Making Fried Rice:

This dish cooks up really quickly, so it’s best to prep all of your ingredients before you start cooking. The best fried rice starts with leftover cooked cold rice. So make your rice a day in advance or the morning that you plan to have it for dinner.

How to Make Shrimp Fried Rice:

  1. Moisten rice with a bit of water and separate grains. Set aside.
  2. Mix together the fish sauce and turmeric.
  3. Add oil to a large skillet and cook the garlic and shrimp together until shrimp is cooked through. Remove shrimp to a bowl and keep warm.
  4. Next, cook eggs and vegetables for about 1 minute.
  5. Stir in rice and cook for about 4 minutes.
  6. Add fish sauce mixture and cook over high heat 4 minutes.
  7. Top with cooked shrimp and cilantro.

What is Fish Sauce?

Fish sauce is simple a liquid seasoning made from fermenting anchovies with salt for over two years. It’s used in many Southeast Asian dishes. I had trouble finding it in our local grocery store, so I ordered a bottle from Amazon.

If you haven’t cooked with fish sauce before, give it a try in this dish. You will be amazed at how flavorful this dish turns out with the addition of the fish sauce. It adds a savory depth of flavor that does not taste like fish in the finished dish.

My kids all asked me,  “Why is this fried rice yellow?”. It is yellow from the turmeric, which is a natural flavor enhancer. It’s optional, but don’t skip it!

Ingredients

  • 2 cups leftover cooked cold white rice - jasmine or basamti
  • 2 tablespoons fish sauce
  • 1/2 teaspoon ground turmeric
  • 2 tablespoons cooking oil
  • 6 cloves garlic minced
  • 12 large shrimp peeled and deveined
  • 2 eggs lightly beaten
  • 1/2 cup French green beans sliced to 3/4- inch pieces
  • 1/2 cup julienned carrots about 3/4- inch pieces
  • 1 ounce chopped fresh cilantro for garnish
  • 1 red chili sliced optional

Instructions

  • Prepare the rice by sprinkling a little water on it to moisten and then separate the grains by rubbing them between your fingers. Set aside.
  • Mix fish sauce and turmeric together in a small bowl.
  • Heat oil over medium heat in a wok or large skillet. Fry the garlic and shrimp, cooking until shrimp is opaque and bright pink. Push shrimp to one side of the wok or move to a bowl and keep warm.
  • Pour beaten eggs on the other side and allow to set a few seconds, then stir well. Add the green beans and carrots and stir fry for a minute.
  • Add rice and increase heat to high and cook 3-4 minutes or until the rice is fully heated through.
  • Add the fish sauce mixture and then mix everything well until the rice is fully coated with the sauce.
  • If you set shrimp aside, top rice with shrimp and garnish with cilantro and sliced chili if desired.
