Step-By-Step Directions for Hamburger Steaks and Gravy

  1. Mix the hamburger steaks:
    In a large bowl, combine ground beef, minced garlic, spicy brown mustard, Worcestershire sauce, hot sauce, salt and pepper. Mix just until combined and shape into thick patties.
  1. Cook the patties:
    Heat bacon grease in a large skillet over medium-high heat. Brown hamburger steaks 3–4 minutes per side until nicely seared. Remove from the skillet and set aside.

  1. Make the gravy:
    Add butter and sliced onions to the skillet. Cook, stirring often, until onions are soft and caramelized. Stir in the flour and cook for 1–2 minutes.

Whisk in broth a little at a time until smooth. Stir in Kitchen Bouquet, onion powder, salt and pepper.

  1. Simmer:
    Return the hamburger steaks to the skillet, spoon gravy over the top, reduce heat to medium-low, and simmer for about 15 minutes, or until patties are cooked through.

Ingredients

  • 2 pounds ground beef I used a mixture of lean ground chuck and ground brisket
  • 4 cloves garlic minced
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon spicy brown mustard
  • 1 teaspoon hot sauce
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper

For the Gravy

  • 2 tablespoons butter
  • 2 onions sliced thin
  • cup all purpose flour
  • 3 cups broth beef or chicken
  • 1 teaspoon kitchen bouquet optional
  • 1 tablespoon onion powder
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper

Instructions

  • Melt butter in the skillet adding sliced onions. Cook, stirring often, until onions are soft and caramelized. Stir in the flour, cooking for 1–2 minutes. Whisk in broth a little at a time until smooth. Stir in Kitchen Bouquet if using with onion powder, salt and pepper.
  • Return the hamburger steaks to the skillet, spoon gravy over the top, reduce heat to low,. Simmer for about 15 minutes or until patties are cooked through to 165° using a digital meat thermometer.
