Sweet Potato Casserole is a classic side dish for Thanksgiving dinner. I love baking the sweet potatoes whole for the best flavor and consistency. How to Make Sweet Potato Casserole:

Whole Sweet Potatoes on a baking sheet

Place 3-4 whole sweet potatoes on a baking sheet and cook for 1 hour or until softened.

Remove from oven and cool slightly. Remove peels and place in a baking dish. 

Sweet potato casserole with butter and brown sugar

Mash sweet potatoes with a fork until smooth.

Top with brown sugar, butter, ground chipotle or smoked paprika and kosher salt and mix well.

Spread evenly in baking dish.

Butter pecan sweet potato casserole

Combine chopped pecans and melted butter and sprinkle over the top. 

Bake for 20 minutes. 

I make this casserole often but I don’t always top it with the buttered pecans. The pecans make it something special for holiday dinners. It is such a simple and delicious recipe that you can make it any night of the week. 

Sweet potato casserole is  often topped with marshmallows for the Thanksgiving feast.  We’ve never been to keen on the syrupy sweet concoction.

We used to skip the sweet potatoes until I started making this casserole. I mean does it still count as a vegetable if it’s covered in marshmallows?

Ingredients

  • 3 pounds sweet potatoes
  • 3 tablespoons butter
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground chipotle or smoked paprika
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • 2 tablespoons butter

Instructions

  • Preheat oven to 425°.
  • Place sweet potatoes on a baking sheet and bake about 1 hour or until they yield to pressure.
  • Remove and cool slightly. Remove skins and place baked sweet potatoes into a baking dish.
  • Mash with a fork until smooth.
  • Add butter, brown sugar, chipotle or smoked paprika and salt. Stir to combine.
  • Combine chopped pecans and melted butter and sprinkle over sweet potatoes.
  • Return to 350° oven for 20 minutes.
