Bacon Wrapped Sweet Potatoes are a super simple side dish for weeknight dinners and delicious enough for holiday meals and special occasions.
Sweet potatoes are one of my favorite side dishes, Roasted Sweet Potatoes, Sweet Potato Fries and even Sweet Potato Casserole are great with just about any meal.
I am a believer that bacon does make everything better like our Bacon White Cheddar Pasta or Bacon Hashbrown Casserole. If you aren't a fan of the sweet marshmallow topped sweet potatoes for Thanksgiving dinner, give these sweet potato stacks a try.
Ingredients Needed
- Sweet Potatoes
- Thin Sliced Bacon
- Brown Sugar
- Smoked Paprika
- Kosher Salt

Step By Step Directions
- Slice sweet potatoes into ¼ inch slices. A mandoline slicer works great to get even slices.
- Use a cookie cutter to cut the center of the slices into perfect circles.
- Stack 4 slices of sweet potato together.
- Wrap a slice of bacon around each stack. Tuck the bottom of the bacon on the bottom side of the sweet potato stacks.
- Place on a parchment lined baking sheet.
- Bake for 30 minutes.
- Add the brown sugar to a bowl with smoked paprika and salt. Mix well.
- Remove sweet potatoes from the oven.
- Spoon brown sugar mixture over the sweet potatoes.
- Return to the oven and bake another 15- 20 minutes until sweet potatoes are cooked through and bacon is crisp.
- Cool a few minutes on the baking sheet.
- Move to a serving platter.
These bacon wrapped sweet potatoes make a delicious side dish or serve them as an appetizer. They are delicious right out of the oven or at room temperature.

Ingredients
- 1 medium sweet potato
- 6 slices bacon (thin sliced)
- 2 tablespoons brown sugar
- ½ teaspoon smoked paprika
- ¼ teaspoon kosher salt
Instructions
- Preheat oven to 375° and line a baking sheet with parchment paper.
- Slice sweet potatoes into ¼ inch slices using a mandoline slicer.
- Use a 2 inch cookie cutter to the center of each slice into circles.
- Stack 4 slices together.
- Wrap a slice of bacon around each sweet potato stack, tucking the end under the bottom of the stack. Place on the lined baking sheet.
- Bake for 30 minutes.
- Remove from oven.
- Mix the brown sugar with smoked paprika and salt.
- Sprinkle over the top of the sweet potato stacks.
- Return to the oven for another 15 - 20 minutes or until the sweet potatoes are tender and bacon is crispy.
- Remove from oven and cool on the baking sheet for a couple of minutes. Move to a serving platter.
