Quiche is one of those recipes that once you make it, you realize how simple it is and you want to make it again and again. Easy to make ahead and it can be really simple, especially if you start with a store bought pie crust!

What is Quiche?
Quiche is a savory French dish with a pastry crust, filled with eggs, milk or cream, cheese, and a can have meats and vegetables. Quiche can be served hot or cold and is perfect for brunch or as a party appetizer.
How to Make Asparagus Quiche:
- Add a pie crust, store bought or homemade to a pie plate. Pierce with a fork over the sides and bottom. Bake for 10 minutes.
- Cut asparagus into thirds. Add to boiling water and cook 3 minutes. Drain well.
- Whisk together eggs, cream, shredded Gruyere cheese, garlic, salt and pepper. Fold in bacon and asparagus, reserve a few asparagus tips to place on top before baking.
- Pour into baked pie shell and top with asparagus tips.
- Bake for 55 minutes to one hour.

Quiche Variations:
Cheese: Swiss is a good choice if you don't have Gruyere. I love smoked Gouda or a smoked cheddar for quiche. Mozzarella is also a great option.
Vegetables: Mushrooms, onions, sweet peppers and spinach are great additions. Vegetables should be at least partially cooked and dry.
Meats: I love adding bacon, ham, or sausage. Meats need to be cooked through before adding to the quiche.
Crustless Quiche: I once saw a meme that crustless quiche was actually a sad version of a pie. I tend to agree, I love the crust. However, if you are cutting carbs, skip the crust and enjoy!

Asparagus Quiche
Asparagus Quiche is a delicious spring dish to serve for brunch or dinner. This simple quiche recipe is filled with fresh asparagus, Gruyere cheese and bacon. Perfect for Easter brunch or any weekend get together with friends and family.
Ingredients
- 1 pie crust
- 4 large eggs
- 1 cup heavy cream
- ½ teaspoon garlic powder
- ½ teaspoon kosher salt
- ½ teaspoon fresh ground pepper
- 1 ½ cups shredded Gruyere cheese
- 6 slices cooked and crumbled bacon
- 1 pound asparagus, washed and trimmed
Instructions
- Preheat oven to 425 degrees F.
- Unroll pie crust and press into a pie plate. Prick the bottom and sides of the pie crust with a fork.
- Bake the pie crust for 10 minutes. Lower oven temperature to 325 degrees.
- Cut Asparagus into thirds. Place in boiling water and cook 3 minutes. Drain and set aside.
- Add eggs to a large bowl, add cream, garlic, salt and pepper whisking until well combined.
- Add bacon, shredded cheese and asparagus. Reserve some of the asparagus tips to top the quiche if desired.
- Pour into pie shell and top with asparagus tips.
- Bake for 50-55 minutes or until center is set.
- Remove from oven and allow to rest 10 minutes before slicing.
