- Sweet Italian Sausage or hot Italian Sausage or any pork sausage
- Chicken Broth
- Petite Diced Tomatoes
- Packaged Gnocchi – From the pasta isle, not refrigerated section or frozen
- Fresh Spinach
- Black Pepper
- Basil Pesto or Italian Seasonings – optional
- Parmesan Cheese for garnish
How to Make Italian Gnocchi Soup



- Cook ground sausage in a Dutch oven or large pot until browned. Stir in chicken broth and tomatoes and bring to a boil.
- Add gnocchi and pesto or Italian seasoning and return to a boil; reduce to simmer for about 4 minutes.



- Stir in baby spinach and add pepper.
- Serve immediately with freshly grated Parmesan cheese.

Where to Buy Gnocchi?
You can find fresh, frozen or dried gnocchi in any grocery store. I generally buy the dried and it’s located near the pasta. Obviously fresh and frozen will be in their relative departments. I have also found it very reasonably on Amazon when I can’t find it at the grocery store.

Italian Gnocchi Soup
Ingredients
- 1 pound ground Italian Sausage
- 4 cups chicken broth
- 1 14.5 oz can petite diced tomatoes undrained
- 1 16 oz package gnocchi not refrigerated or frozen
- ¼ cup basil pesto optional or 1 tablespoon Italian seasonings
- 1 6 oz package fresh baby spinach leaves
- ½ teaspoon freshly ground black pepper
- ½ cup freshly grated parmesan cheese
Instructions
- In a 4 quart Dutch oven, add ground sausage and cook over medium-high heat until browned.
- Add chicken broth and tomatoes and bring to a boil. Add gnocchi and pesto or Italian seasoning. Return to a boil; reduce heat. Simmer 2-4 minutes until gnocchi float to top.
- Add baby spinach, stirring until spinach is wilted. Stir in pepper.
- Ladle into bowls and top each serving with 1 tablespoon cheese.

- Store leftover soup in an airtight container in the refrigerator up to 3 days. Freeze in a freezer-safe container up to 3 months.
- Reheat gnocchi soup in a pan over medium heat, stirring often until heated through.

This recipe came from a cookbook. I have never tried refrigerated or frozen gnocchi but I’m guessing the cooking time is just different. I would say you could use either and just cook until the gnocchi is cooked through.

This was loaded with flavor. I used hot Italian sausage and had to use gluten free gnocchi. Outstanding and so easy. Served this with a hunk of sour dough bread for my husband. He really enjoyed it. Great on a cold night in the fall. I will make this again.

I have doubled the batch and frozen 1/2. The spinach is different like if you would have used frozen instead of fresh. Nobody noticed 😉 II will be doubling this from now on as as it is a family favorite.
I have made this recipe twice now. First time was according to directions. We had an unexpected snow and I had the main ingredients of sweet Italian sausage, gnocchi, and chicken broth. Didn’t have fresh spinach or canned diced tomatoes. I substituted tomato sauce for the canned tomatoes and frozen Green Giant creamed spinach for the fresh spinach. It had a really creamy tomato soup vibe to it and so good. Great with frozen garlic knots I heated in the toaster oven.

Made this yesterday and it was by far one of the most delicious meals that I have made that is this also super easy to make. I was very skeptical that it would turn out very good since there are barely any ingredients and there’s no onion or garlic, but I genuinely think it doesn’t need it. Next time I will double up on the spinach just to get more veggies in there.

I know people instantly scoff when people review a recipe they changed…..but give it a try! I had an Italian Sausage Tortellini soup from another site that had phenomenal flavor so I added the base elements to this recipe and it was AMAZING!!!! I added a medium onion, a medium bell pepper, and four minced garlic cloves to the Italian sausage while it cooked. Then when I added the broth and tomatoes, I added 1 tsp of Italian seasoning, 1 bay leaf, and crushed red pepper. I let it simmer for 10-15 minutes before adding the kale and gnocchi. My additions just added extra flavor and extra veggies which is always a plus!
