  • Add butter, shortening, brown sugar, eggs and vanilla to a mixer bowl. Beat until well combined with an electric mixer.
  • Stop the mixer and add flour, baking soda and salt. Mix at medium speed until mixed well.
  • Add coconut and mix until combined.

Coconut Pound Cake

Quick and easy coconut pound cake is a great dessert for any day of the week and delicious enough for holidays and celebrations.

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 3 eggs
  • 1 1/2 cups brown sugar
  • 2 teaspoons vanilla extract
  • 1 3/4 cup all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup shredded sweetened coconut flakes
  • non stick cooking spray

for icing:

  • 1 1/2 cup powdered sugar
  • 1/4 cup milk
  • 1 cup toasted coconut

Instructions

  1. Preheat oven to 325° with a rack on the bottom.
  2. In a mixer bowl, add softened butter, shortening and brown sugar. Mix until combined.
  3. Add eggs, one at a time, mixing until combined.
  4. Mix in vanilla extract.
  5. Add flour, baking soda and kosher salt.
  6. Spray a loaf pan with non stick cooking spray.
  7. Pour batter into loaf pan and bake on the bottom rack for 1 hour or until a toothpick inserted comes out clean.
  8. Remove to a wire rack to cool for 10 minutes.
  9. Place cake on a serving tray.
  10. Mix powdered sugar with milk and pour over cake and down the sides.
  11. Top with toasted coconut.
  12. Slice and serve.

  1. Going to bake this tomorrow! Definitely coconut lovers, and I love all pound cakes!
    Your ingredients for the glaze has powder sugar twice, not milk for the second ingredient.
