Chocolate Cheesecake Pudding Pops are the ultimate summer treat that both kids and adults will love!
It has already warmed up to the point we’ve been running the a.c. and the kids were at the lake last weekend. I’m ready for summer and I’ve made the first batch of popsicles. That makes it official doesn’t it?
Cody is home from his first year of college. He finished at the top of his class and because of his excellent grades, he received a scholarship for next year. Can you see me smiling? So proud of this kid. Just two more weeks of school for the other two and we are counting the days. This has been a long school year for Emmet, but nobody wants to hear the ugly words I have to say about that.
I make loads of popsicles during the summer, they are so perfect for cooling off. These Chocolate Cheesecake Popsicles were actually meant to be a pie but I could tell the filling was not going to setup, so I poured it into popsicle molds and they were a raging success.
They are chocolatey, creamy, frozen and delicious making them the perfect summer time treat.
When I was getting ready to photograph these, Emmet came wandering through and grabbed one. Luckily I caught him before he started eating it. He followed me around waiting very patiently to get his popsicle and then he was rewarded with a delicious treat. Of course he had to pose for a few pictures but he didn’t seem to mind.
- 1 small box chocolate instant pudding mix
- 4 oz softened cream cheese
- 2 cups milk
- Add the instant pudding mix and cream cheese to a mixer bowl and beat until smooth. Add milk and mix until well combined.
- Pour into popsicle molds and freeze at least 4 hours or overnight.
