Summer is flying by! FLYING!! We found out school starts back August 10th! Of course the summer heat will still be around until September or October.  So, I have the perfect excuse to make these Mocha Popsicles for months to come.

I have to have my morning coffee, no matter how hot it gets in Oklahoma. During the summer months I generally end up with a cup or two left in the pot. The guys don’t drink as much coffee during the summer. Who could blame them? The heat index has been over 100 lately.

I love coffee in just about any form and especially iced coffee.  I turned a bit of my leftover morning coffee into these Mocha Popsicles. They are just the ticket to cool off in the summer heat.
