    White Chocolate Biscoff Muddy Buddies

    Today I am wishing a great big congratulations to my good friend Rachel, you know her from her fabulously creative recipes on Rachel Cooks and her family, soon to be bigger by 2 feet!  Two baby boy feet to be exact.

    Rachel and her husband have a sweetie pie of a little girl and they will be welcoming their sweet baby boy in December!

    Brandy & Brandi brilliantly planned a surprise virtual baby shower and I have White Chocolate Biscoff Muddy Buddies. 

    We couldn't all get together in real life but just the same we wanted to come together to celebrate this special, blessed event for Rachel and her family.  With three boys of my own I know there are fun and exciting times to come!

    I haven't been to a baby shower in at least 10 years, I wasn't sure what to bring.  I stewed about it; I wanted to bring something great.  Something Rachel would like.  I decided Biscoff definitely had to be involved and with the holidays approaching I had Muddy Buddies on the brain.  I switched it up a little with white chocolate and Biscoff in place of the standard peanut butter and chocolate.

    A few years ago I made Muddy Buddies for the first time. I was so excited for the boys to come home from school.  I had found a new treat that I knew they were going to love.  Much to my surprise, they were like, "yeah, it's good, we have them at school all the time!"

    Well it was new to me and has become a standard in my holiday baskets, this year I think I will switch up with the Biscoff and white chocolate.   Sweet cookie butter with the saltiness of the cereal and the powdered sugar coating all come together for a treat loved by all.

    Rachel is truly one of my best blogging friends and I can't wait to see the photos of her little bundle of joy!  Much love to you and your family Rachel!

    White Chocolate Biscoff Muddy Buddies

    adapted from Betty Crocker

    Ingredients:

    • 9 cups Chex Cereal (I used 3 cups each corn, rice & wheat)
    • 1 cup white chocolate chips
    • ½ cup Biscoff Spread
    • ¼ cup butter
    • 1 teaspoon vanilla
    • 1 ½ cups powdered sugar
    Cooking Directions:
    Measure Chex cereal into a large bowl and set aside.
    In a medium size bowl, add white chocolate chips, Biscoff and butter.  Microwave on high for one minute.  Stir and continue to cook in 30 second intervals until smooth.
    Add vanilla and stir to combine.
    Pour over cereal and stir to coat well.  Add powdered sugar and stir until all combined and cereal is well coated.
    Spread onto a cookie sheet and allow to cool.  Store in an airtight container.
