I also love this recipe for last minute get togethers. I have been keeping pomegranate arils on hand.

How to Seed a Whole Pomegranate:

I just cut the pomegranate in half and let it soak in water for about 15 minutes. It’s super easy to get the arils out and then I just keep them in a covered dish in the fridge. They keep for at least 5 days but they don’t usually last that long. I love them in my yogurt!

I also keep toasted pecans on hand. They are the perfect topping for salads and I can’t resist just snacking on them. I’m so bummed that the birds or the squirrels managed to get all but a handful of my pecans again this year.

How to Toast Pecans:

Place shelled pecans (halves or pieces) on a baking sheet. Place in a 350 degree oven for 10 minutes.  Remove from oven and set aside to cool. Keep in a sealed container until ready to serve.

Emmet’s birthday is this week and we are having the whole family over for dinner and I’m definitely making this easy appetizer and these easy Cocktail Wienies with Grape Jelly Chili Sauce.

Of course my Easy Party Punch will also be on the menu and a ton of shrimp! Maybe I will finally get around to sharing my mom’s famous cocktail sauce recipe with y’all.

Everyone always talks about how time flies but seriously, how is it possible that my baby is turning 13 this week? A teenager!!

I do love having birthday parties and holiday get togethers with the family. I don’t get too stressed over the details and try to create a comfortable atmosphere for everyone. Having simple party food and drinks really does help out.

It is always easy to have someone else take care of things like the ice, paper plates and napkins for these laid back holiday parties. Everyone likes to help out and it’s a few things I don’t have to worry about.

The holidays can be really stressful. I am such a procrastinator and I’ve just been swamped with work but I still want to entertain, so I just keep it all super simple.

What ever your holiday plans, I hope that you can take some time to relax and enjoy it. I’m going to make a point of it this year.

Emmet asked me if I could at least take off for Christmas this year. Ugh, how crazy is that? The bad part is, I don’t usually take off the entire holiday.

I am definitely taking off for Christmas Eve and Christmas this year. No computer, no working! Just time with those I love.

Ingredients

  • 8 oz softened cream cheese
  • 1/2 cup pomegranate arils
  • 1/2 cup toasted and chopped pecans
  • 1 tablespoon chopped fresh rosemary
  • 1/4 cup honey

Instructions

  1. Add softened cream cheese to a serving dish.
  2. Sprinkle with pomegranate arils, pecans and fresh rosemary.
  3. Drizzle with honey.
  4. Serve with crackers, toasted baguette slices or apple slices.

  1. This is exciting! I have local pomegranates to use up, grow my own rosemary, have honey from my aunt’s garden, & where I’m going for t-day, there will be no room in the oven or on the stove. Gorgeous & delicious—MANY thanks!

  2. Making this for my Ladies’ Night tonight. It looks beautiful. I was thinking of using goat cheese but I’m going to stick with the cream cheese.
