Peanut Butter Crispie Cookies

Peanut Butter Crispie Cookies ~ Easy & Delicious Cookies 

These have oats and crisp rice and peanut butter and are good. They hold up well and are perfect for packing lunches or carrying to picnics and barbecues.

Ingredients Needed:

  • oil
  • eggs
  • peanut butter (I like crunchy, but use creamy if you like)
  • sugar
  • brown sugar
  • vanilla
  • flour
  • oats
  • crisp rice cereal
  • salt
  • baking powder
  • baking soda

Pre-heat oven to 375 degrees.

In a large bowl, add oil, eggs, and  peanut butter.  

Beat with an electric mixer until combined.  

Add in sugars and vanilla, beating with mixer until combined.  

Add remaining ingredients and mix until all is combined.  

Use a cookie scoop or form into balls and place on a greased or lined baking sheet.  

Smash cookie balls slightly and bake for 10-12 minutes or until lightly browned.

  • ½ cup peanut butter (I like crunchy, but use creamy if you like)
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 ¾ cups oats
  • 1 cup crisp rice cereal
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • 1 teaspoon baking soda
