Date Balls

Dates have always been one of my favorites for holiday treats, like my White Chocolate Date Bars. They remind me of a bakery cookie bar that I used to love when I was growing up. I’ve also had my eye on these No Bake Dessert Bars with Dates, Honey & Nuts.

I was thumbing through my mother in law’s Progressive Farmer cookbook and found this recipe. I made a few adjustments and totally fell in love. A classic holiday treat to add to your holiday plans!

How to Make Date Balls:

  • Melt butter in a medium sauce pan over medium heat.
  •  Add sugar and egg and mix until combined. 
  • Stir in chopped dates.
  • Cook, stirring constantly, 10 minutes.

  • Remove from heat and stir in Rice Krispies and chopped pecans.

  • Roll into 1 inch balls and roll in toasted coconut. 
  • Keep refrigerated until ready to serve.

How to Store Date Balls:

Keep Date Balls in an airtight container in the refrigerator. They can be served chilled or at room temperature. 

How Long will Date Balls Keep:

Date Balls can be refrigerated in an airtight container for up to 2 weeks. Making these perfect to make ahead of your holiday celebrations or to have on hand for guests. 

You might know these as coconut date balls or Rice Krispie Date Balls, whatever you call them, they are delicious! I will be adding these to my must- have Christmas desserts.

I love making lots of sweets for Christmas to share with my family and neighbors and on occasion I get some of them shipped to my family that live in other states.

Date Balls are easy to make and can be made in less than 30 minutes. If you can get the kids helping you make the balls or rolling in the coconut, even faster. 

I’m not the most patient with my kids in the kitchen but we always make time to bake something for Christmas. Decorating cookies or making a gingerbread house and these easy coconut Date Balls are perfect to make with the kids.
