Okay this is one heck of a sandwich. I had something similar at Applebee’s but they were a little stingy with the bacon. I need bacon! Taco John’s has been advertising that bacon is part of a man’s DNA and the way to catch a man is give him bacon. Too funny! Anyhow, I added the avocado and this is one of my go to meals for summer. They go together really quick and are so delicious. Great served with mac and cheese or tomato soup. Perfect for lunch or supper they are sure to be a hit!
Avocado Bacon-Grilled Cheese Sandwiches
1 pound bacon,sliced in half, cooked and drained
18 slices bread (white or wheat your choice)
1/4 cup butter, softened
6 slices american cheese
6 slices provolone or swiss cheese
2 avocados, peeled, cored and thinly sliced
2 teaspoons lemon juice
2 teaspoons salt
1 teaspoon fresh ground pepper
2 teaspoons granulated garlic
1 1/2 cups shredded lettuce
Pre-heat a griddle or non-stick skillet. Butter 12 slices of bread on one side. Place 6 slices of bread, butter side down on griddle, top with one slice each of american and provolone cheese. Top with other 6 buttered slices of bread (butter side out). Meanwhile, lightly toast 6 other slices in toaster. Flip grilled cheese sandwiches when they are lightly browned and allow to cook on the other side. Remove from griddle when lightly browned and cheese is melted. Sprinkle avocado slices with lemon juice, salt, pepper and garlic.
Spread outside of grilled cheese on one side with mayo, layer cooked bacon slices, sliced avocado, lettuce and a slice of toast that has been spread with mayo. Cut in half diagonally and serve.
