Coconut Dream Cookies

After making a lovely coconut cream pie, I had some coconut left and thought I should put it to good use in cookies.  I added some oats and chocolate chips of course and voila a very tasty cookie.  They are so good, I can’t stop eating them, I need an intervention or something.  These would be a really great Valentine’s treat or just perfect for days like today when you have extra coconut nagging at you to be baked.

Coconut Dream Cookies

Ingredients:

1/2 cup butter, softened

1/2 cup vegetable oil

2 eggs

1 cup sugar

1 cup brown sugar

1 teaspoon vanilla extract

2 cups all purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup coconut

1 1/2 cups oats

1 1/2 cups chocolate chips

Cooking Directions:

Pre-heat oven to 350 degrees.  In a large mixing bowl add butter, vegetable oil and eggs.  Beat with an electric mixer until light and fluffy.  Add sugars and vanilla, beating until well combined.  Add flour, baking soda, baking powder, salt, coconut, and oats, beat until combined.  Stir in chocolate chips.  Using a medium size cookie scoop or rounded tablespoon, drop onto a greased or lined baking sheet about 2 inches apart.  Bake for 12-14 minutes or until lightly browned.  Remove from oven and cool for a few minutes on the cookie sheet before moving to a wire rack to cool.

Found your recipe on Foodbuzz, so I had to come take a look. I love coconut and chocolate chips cookies, and I’ve also recently discovered the benefits of adding oatmeal to the batter!

Hi

I never used vegetable oil in making cookies, what’s the purpose of using oil in this recipe.

I have used vegetable oil in several cookie recipes, I am not sure but I think it makes the cookies have a crunchiness to them without them being hard.
