Fresh Tomato and Herbed Ricotta Bruschetta

A few weeks back my sister in law brought me a carton of freshly made ricotta cheese, and a selection of blue cheeses and smoked sausage from a local Italian market called Lovera’s.

I wouldn’t have expected an authentic Italian Market in the middle of Oklahoma but I am in heaven with these locally made cheeses! Fresh ricotta cheese is one of my all time favorites, seriously I could eat it with a spoon.

Our garden has slowed down a bit the last few weeks but I’m still getting a few of our gorgeous heirloom tomatoes. They were the perfect addition to the fresh ricotta cheese for an amazing appetizer that comes together in just minutes.

How to Make Fresh Tomato and Herbed Ricotta Bruschetta:

  • Slice and toast a baguette.
  • Slice 2 medium heirloom tomatoes.
  • Mix fresh ricotta cheese with olive oil, fresh basil, fresh rosemary, salt, and fresh ground pepper.
  • Top each toasted baguette slice with an heirloom tomato slice and top with about a tablespoon of ricotta mixture.
  • Garnish with additional basil if desired.
  • Serve immediately.

What is Bruschetta?

Bruschetta is grilled or toasted Italian bread topped with olive oil and toppings. Typically tomatoes, garlic, herbs, cheese, beans or cured meats. Generally served as an appetizer.

I have often said that I could skip the meal and just enjoy appetizers and that’s totally my favorite for a last minute get together.

I sliced up my goodies from Lovera’s and put the herbed ricotta together and opened up a bottle of my favorite Muscadine Wine, from Post Winery in Arkansas.

Have you ever tried muscadine wine? It’s pretty sweet but oh, so delicious. The last time we visited my folks, we accidentally took a detour through the Post Winery that is near where I grew up. I want to go back there for an official tour and tasting.

Sometimes after a long day, putting together a quick meat and cheese board and cracking open a bottle of wine is just the ticket. You would think I would make glorious dinners every night of the week but it doesn’t quite work out that way.

I’m still trying to adjust to the back to school schedule and getting dinner ready at a decent hour. I think I was successful 1 out 4 days this week.  So a night off from the kitchen is my kind of Friday night.

Heirloom Tomat and Herbed Ricotta Bruschetta

Fresh Tomato and Herbed Ricotta Bruschetta is a super simple appetizer for summer gatherings. The perfect addition to your charcuterie board or a date night of wine and cheese!

Ingredients

  • 1 cup fresh ricotta cheese
  • 1 tablespoon olive oil
  • 1 tablespoon fresh basil, finely chopped
  • 1 teaspoon fresh rosemary, finely chopped
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon fresh ground pepper
  • 1 baguette, sliced and toasted or grilled
  • 2 medium heirloom tomatoes, thinly sliced

Instructions

Mix fresh ricotta cheese with olive oil, fresh basil, fresh rosemary, salt, and fresh ground pepper.

Top each toasted baguette slice with an heirloom tomato slice and top with about a tablespoon of ricotta mixture.

Garnish with additional basil if desired.

Serve immediately.
