Chunky Vegetable Dip

I’m always looking for easy, no cook appetizers for summer and this cool and delicious dip is a snap to make. A great make ahead appetizer for barbecues and picnics.

How to Make Chunky Vegetable Dip:

Diced radishes, tomatoes, cucumbers, onions and fresh herbs on a wood cutting board

  1. Seed and dice a medium size cucumber, about 1/4 cup.
  2. Seed and dice grape tomatoes, about 1/4 cup.
  3. Dice 3 large radishes, about 1/4 cup.
  4. Dice 1/4 of a Vidalia Onion, about 1/4 cup.
  5. Dice 1/2 of a large garlic clove.
  6. Finely chop fresh herbs such as cilantro, parsley, rosemary, dill or basil. Mayo and sour cream in a black bowl for dip
  7. Add mayonnaise and sour cream to a bowl and mix together. diced vegetables in a mayo and sour cream base
  8. Add chopped vegetables and herbs and stir to combine.
  9. Cover and refrigerate until ready to serve.
  10. Serve with fresh vegetables like carrots, celery, broccoli, sliced cucumbers, and sweet peppers.

Ingredients

  • 1/4 cup seeded and diced cucumbers
  • 1/4 cup seeded and diced grape tomatoes
  • 1/4 cup diced radishes
  • 1/4 cup diced Vidalia onion
  • 1/2 garlic clove finely chopped
  • 1 tablespoon chopped parsley or cilantro
  • 1 teaspoon chopped fresh rosemary dill or basil.
  • 1/2 cup mayonnaise
  • 1/2 teaspoon kosher salt
  • 1/2 cup sour cream
  • 1/2 teaspoon pepper

Instructions

  • Seed and dice cucumbers and tomatoes.
  • Dice onion, radish, and garlic.
  • Finely chop fresh herbs.
  • Add mayonnaise and sour cream to a serving bowl and stir to combine.
  • Add diced vegetables, garlic, herbs, salt and pepper, stirring to combine.
  • Cover and refrigerate until ready to serve.
  • Place in center of a platter and surround with fresh vegetables for serving.

  1. Your printable recipe for Chunky Vegetable Dip shows only one ingredient. I found some of the ingredients in the body of the information on the recipe. However there is no mention of how much mayonnaise or sour cream to be used in the recipe.
