I made a quick trip into town before the weekend to stock up. I picked up some things for grilling, and for a huge batch of guacamole. I also grabbed some fresh blackberries, lime and 7UP® for these fabulous mojitos!

I am pretty partial to my Pineapple Margaritas but I have to say these Blackberry Mojitos are pretty fantastic. The blackberry, mint and lime are just so refreshing and delicious!

I had a mojito at some sort of get together about a hundred years ago and loved it. Our wild blackberry bushes are loaded with blooms. I am anxiously awaiting those ripe berries! In the meantime a blackberry mojito cocktail just had to happen.

I rarely plan ahead but I always pick up plenty of chips and salsa from Walmart plus lots of charcoal for grilling and last minute get togethers. Impromptu gatherings are usually my favorite.

So next time you are in town, be sure to pick up a bottle or two of 7UP, a few fresh limes and fresh blackberries. Grab a mint plant if you don’t already have one. I often find them in the produce section.

Ingredients

  • 1/2 cup blackberries, plus more for garnish
  • 1 bunch fresh mint
  • 1 lime, sliced
  • 1/2 cup rum
  • 8 oz 7UP

Instructions

  1. Add a few blackberries to each glass along with a few mint leaves.
  2. Squeeze a slice of lime over the top. Gently muddle the berries and mint leaves.
  3. Top with crushed ice.
  4. Add rum and top with 7UP.
  5. Garnish with blackberries, lime slices and mint leaves.

Notes

Rum is optional, skip the rum and add additional 7UP for a family- friendly drink.
