Virgin Peach & Raspberry Bellinis are a sweet summer mocktail perfect for parties!
I am so excited to be part of a little Italian inspired baby shower today for my good friend Aggie of Aggie’s Kitchen. Aggie and her husband will be welcoming a sweet little boy into their beautiful family this fall.
Aggie is such a sweetheart and with recipes like Whole Wheat Rotini with Lemon & Arugula Pesto, she seriously inspires me to eat healthier! Aggie is always so positive, so kind and I always feel better about life in general after chatting with her. You will never meet a kinder soul.
I believe that kids are the biggest blessing in life and I can’t wait to see the photos of this little fella! So here’s a big congratulations Aggie!
I made Virgin Peach & Raspberry Bellinis for this special occasion and you can find the recipe below.
- 1 cup fresh sliced peaches (peeled and pit removed)
- 2 cups peach juice (I used Minute Maid)
- 2 cups club soda
- 1 pint raspberries for garnish
- fresh mint for garnish
Add sliced peaches and peach juice to a blender and blend until completely smooth. Add club soda and blend for a few seconds just until mixture comes together.
Pour over ice and garnish with raspberries.
