Sliced Smoked Roast Beef for Loaded Potato Skins

There are lots of ways to stuff potato skins but I’m telling you these Loaded Potato Skins are going to blow your mind. We used a smoked roast beef, (get the step by step recipe) but you could use, chopped steak, ground  beef or whatever you have on hand. Although, I highly recommend the smoked roast beef.

We love hosting family get togethers for the holidays and we always have an assortment of delicious appetizers. These Loaded Potato Skins are a definite favorite with our family.

Tips for Making Loaded Potato Skins:

  • Use small red or white skin potatoes.
  • Scrub them with a brush to remove any dirt and remove any eyes.
  • Cutting the potatoes in half will make them cook faster, saving you some time in the kitchen.
  • A light coating of olive oil will keep the potatoes from drying out when baked.
  • Cook bacon until it just turns brown but not crisp. This will make it easy to wrap around the potatoes. Check out my recipe on how to cook bacon. Easiest method ever!
