    I've got a great casserole for you today that is perfect for fall that the entire family will enjoy!  You will want to save this one for that leftover holiday ham!

    Fall is finally here in Oklahoma.  The temperatures are finally below 90 degrees and I'm loving it.  It won't be long and leaves will start to change and we will all be craving those comforting casseroles.

    This Cheesy Ham and Veggie Quinoa Bake is perfect for using up a bit of leftover ham and a great way to sneak a few extra veggies onto your family's dinner plates.

    My favorite holiday ham will always be from Petit Jean Meats.  When they asked for some ideas for leftover holiday ham, I started brainstorming with my sister in law.  She cooks up a batch of quinoa every week and thought it would be great in this casserole.  She was right! My family loved this dinner and I hope your family will too!

      Hey.,I thought I had leftover quinoa but it was couscous. It worked and was very good.I'm a big quinoa eater, this is a nice variation. I followed the quinoa package direction when cooking (2 c water, 1 c quinoa)and added flavoring. Then mixed in fresh chopped spinach, only 3 eggs, and slightly more cheese with the called for ingredients. Plus, added some garlic salt, pepper, and rosemary. A winner for me, my husband, and 1 year old. Quick, easy, and healthy. Have plenty for the week.
