Sausage Gravy

Add sausage to a large skillet and cook over medium-high heat. Use a wooden spoon to break up sausage into crumbles. Cook until well browned.
Add bacon grease or butter to sausage, stirring until melted.
Sprinkle flour over sausage, cook, stirring continually until flour starts to brown, about 5 minutes.
Whisk in milk and continue to cook until gravy starts to bubble. Add salt and pepper. Lower to simmer and continue to cook, whisking until thickened.
Serve over buttermilk biscuits.
If gravy is too thick, whisk in milk, 2 tablespoons at a time until desired thickness is reached.
If gravy is thin, add 1 tablespoon of bacon grease or butter with 2 tablespoons of flour to another skillet. Cook 3 minutes over medium heat, whisking continually. Mix flour mixture into gravy and cook until desired thickness is reached.
For cream gravy, substitute 1/2 to 1 cup of milk with heavy cream.
