Easy Chocolate Ice Cream with Caramel

Happy 4th of July Y’all!  I know you need some cool treats for your parties and I have the easiest chocolate ice cream for you.  I couldn’t resist adding a little dulce de leche in because chocolate and caramel are so good together.

You could add anything you like to this, crushed candy bars, nuts, coconut, and peanut butter is what I am going to try next!  Have fun with it.  Or just make the chocolate ice cream and let everyone stir in their favorite toppings.

We do that often at our house.  It’s usually a combination of peanut butter and sprinkles or hot fudge and caramel plus whipped cream if we have any.

There are such fire dangers here that we will not have fireworks this year but we will have a good day with our family.  Work continues on the ranch, even on holidays.  The irrigation water has to be moved and the cattle have to be checked.  After the work is done we will be enjoying plenty of good food and maybe some swimming.

Easy Chocolate Ice Cream with Caramel


  • 3 cups half and half
  • 4 oz dark chocolate, coarsely chopped
  • 1 14 oz can sweetened condensed milk
  • 1/3 cup dulce de leche caramel


Add 1 cup of half and half along with chopped chocolate into a small pan over low heat, stirring just until chocolate is melted.  Pour into a bowl and mix in remaining half and half and sweetened condensed milk,whisking until well combined.

Cover and refrigerate 2 hours.

Pour into ice cream maker and follow manufacturers directions. Drop in caramel by 1/4 teaspoonfuls and stir to mix in. Place in an airtight container and freeze until ready to serve.

Remove from freezer about 10 minutes before ready to serve to allow ice cream to soften slightly.
