Rosemary Pesto

Rosemary Pesto

A few years back I had an abundance of rosemary and decided to make pesto.  WOW!  It was so tasty.  I had it on pasta, potatoes, with fish….so delicious!  It’s doesn’t take long to make.  I much prefer homemade pesto to the prepared pesto in the jar.  I’ve just never found one that I am happy with.  This recipe is easy to make half or  double and if you have leftovers, it keeps in an airtight container in the refrigerator for several days, or freeze in ice cube trays and then place in a plastic freezer bag to use anytime.  Pesto is also a great way to add fresh flavor to homemade soups and sauces.  If you have never made pesto, you must give this a try.

Rosemary Pesto

1 cup fresh rosemary, stems removed

2 garlic cloves, diced

2 tablespoons toasted pine nuts (toasted pecans or walnuts can be substituted)

1/2 cup parmesan cheese, grated

1/4 cup  olive oil

1/2 teaspoon salt

freshly ground black pepper, about 5 turns of pepper mill

In a food processor, using the knife blade process rosemary, nuts parmesan cheese and garlic pulsing until everything is finely chopped and blended together.  While the processor is running, stream in olive oil.  Remove to a small bowl and stir in salt and fresh ground pepper.  Store in an airtight container in the refrigerator for up to 4 days.  Stir well before using.

Enjoy!

Tex-Mex Spice Mix

by Milisa on March 16, 2010

Tex-Mex Spice Mix

Have I mentioned that I am really forgetful?  I always forget things at the grocery store, like taco seasoning, so I came up with my own because I can’t live without Taco Tuesdays. Okay, so we don’t have tacos every Tuesday, but we have them a lot.  I love tacos, kind of like Bubba going on in Forrest Gump about shrimp, that’s how I feel about tacos.  Pork tacos, ground beef tacos, grilled chicken tacos, steak tacos, are you starting to get a picture?  Any way this spice mix is really simple and most likely all of the ingredients are in your pantry or easily accessible from your regular grocery store.  So fret no more, if you’re like me, Taco Tuesdays are on again!

Tex-Mex Spice Mix

Ingredients:

1/2 cup chili powder

4 tablespoons ground cumin

2 tablespoons black pepper

2 tablespoons salt

2 tablespoons granulated garlic

1 tablespoon cilantro

Directions:

Combine all ingredients thoroughly and store in an airtight container.  Makes about 1 cup.

Uses:

For seasoning meats I use 1 tablespoon per pound of meat.

For a creamy Tex-Mex dip

1 tablespoon Tex-Mex spice mix

1 cup ranch dressing

2 tablespoons sour cream

Mix well.
