Quick Pepperoni Pizza Snacks

With two teenage boys in the house we can never have enough snacks and pizza is their favorite.  I found mini pepperoni slices at the grocery store and thought what better use than mini pizzas.  This is so simple that I am not sure it even constitutes a recipe.  With the added bonus that it’s easy enough the kids can help put it together.  The crust is made from canned biscuits.  I am a big fan of canned biscuits, some days they save my sanity, and I tell you it needs saving. Use any toppings that you have in the fridge and make a meal out of it by adding a green salad on the side.   EASY! EASY! EASY!

Quick Pepperoni Pizza Snacks

Ingredients:

1 can refrigerated biscuits (I used Grands)

1 cup mozzarella cheese, shredded

1 tablespoon dried oregano

2 oz mini pepperoni slices

Cooking Directions:

Pre-heat oven to 375 degrees.  On a clean surface, use a rolling pin to flatten each biscuit dough into about a 4 inch circle.  Place on a greased or lined baking sheet.  Sprinkle each crust with about 2 tablespoons mozzarella, a little oregano and a few pepperoni slices.  Bake for 10-12 minutes or until crust is fully cooked and lightly browned around the edges.

Recipe or no recipe, mini pizzas topped with pepperoni are the best!

My children would love this! I have never seen mini pepperoni before…it is so cute! I will have to look for it here in Maryland. I guess I could just chop up regular pepperoni, but it would look as good/cute as yours. Thanks, Milisa!

Think you can make these ahead of time and put them in the freezer for a few days?
