- 1 ½ cups whole wheat flour
- ½ cup flax meal
- ½ cup old fashioned oats
- ½ cup walnuts toasted and finely chopped or pecans
- 1 tablespoon baking powder
- 1 tablespoon ground cinnamon
- ½ teaspoon kosher salt
- ⅓ cup olive oil any neutral oil or melted butter
- 1 ⅔ cup whole milk
- 2 large eggs
- butter for serving
- pure maple syrup for serving
Add flour, flax meal, oats, walnuts, baking powder, salt and cinnamon to a large mixing bowl and whisk together.
Add liquid ingredients and mix together until well combined.
Pour about 1 cup of batter into waffle iron and bake 2-3 minutes or until waffles are browned and cooked through.
Place on a wire rack until ready to serve.
Serve with butter and pure maple syrup
Store leftover waffles in an airtight container in the refrigerator for up to 3 days.
Refrigerate or freeze cooled waffles in a single layer, then transfer to a freezer bag for longer storage.
Reheat in a toaster or air fryer to bring back that crisp texture.
