Ingredients

  • 1 ½ cups whole wheat flour
  • ½ cup flax meal
  • ½ cup old fashioned oats
  • ½ cup walnuts toasted and finely chopped or pecans
  • 1 tablespoon baking powder
  • 1 tablespoon ground cinnamon
  • ½ teaspoon kosher salt
  • cup olive oil any neutral oil or melted butter
  • 1 ⅔ cup whole milk
  • 2 large eggs
  • butter for serving
  • pure maple syrup for serving

Instructions

  • Add flour, flax meal, oats, walnuts, baking powder, salt and cinnamon to a large mixing bowl and whisk together. 
  • Add liquid ingredients and mix together until well combined.
  • Pour about 1 cup of batter into waffle iron and bake 2-3 minutes or until waffles are browned and cooked through. 
  • Place on a wire rack until ready to serve.
  • Serve with butter and pure maple syrup

Notes

Store leftover waffles in an airtight container in the refrigerator for up to 3 days.
Refrigerate or freeze cooled waffles in a single layer, then transfer to a freezer bag for longer storage.
Reheat in a toaster or air fryer to bring back that crisp texture.
