Waffle Grilled Cheese
A crispy waffle iron grilled cheese with melty American cheese and mozzarella tucked into golden pockets that are perfect for dipping into soup.

- 4 slices bread We used Texas toast, any sandwich bread works
- 2 tablespoons butter softened
- 2 slices American cheese or cheddar slices
- ½ cup mozzarella cheese shredded or sliced thin
Preheat waffle iron.
Spread butter onto one side of each slice of bread.
Top plain side of bread with a slice of American cheese and mozzarella. Add top slice of bread - butter side out.
Place in waffle iron and press down (use a pot holder or towel to avoid burning your hands).
Cook until bread is toasted and cheese is melted.
Repeat with remaining ingredients.
Serve immediately.
- Use any combination of cheese that you have on hand.
- Add cooked bacon, thin sliced ham or pepperoni with the cheese for a meaty sandwich.
- Serve with tomato soup, marinara or dunk into ranch.
- Best served immediately. Leftovers can be wrapped in plastic wrap and refrigerated for 2-3 days. Reheat in a toaster oven or stovetop in a skillet over low heat.
