Malibu Pineapple

Ingredients

  • 1 pineapple peeled, cored and cut into spears
  • 1 ½ cups Malibu Rum (coconut rum)

for the cocktail

  • 8 ounces Sprite or club soda
  • ice
  • fresh mint optional garnish

Instructions

  • Place pineapple spears into a wide mouth jar.
  • Pour Malibu rum over the top, completely covering the pineapple spears.
  • Cover with an airtight lid and refrigerate for 4 hours or overnight for the best flavor.
  • Enjoy the rum soaked pineapples as an adult snack or cocktail garnish.

for Cocktails

  • Fill glasses with ice. Top each with 2 ounces of rum from the pineapple jar and top with Sprite.
  • Garnish with rum soaked pineapple chunks and a sprig of fresh mint.

Notes

  • Large Batch: Depending on the size of your pineapple, you can fill 2 jars and top each with 1 1/2 cups of rum.
  • Storage: Keep the pineapple stored in rum in the refrigerator for up to one week.
  • Variations: Try swapping Sprite with coconut sparkling water or ginger ale for a different twist. Fresh pineapple is my favorite. You can use the pineapple spears in coconut water, just drain before adding the rum.
