Crock Pot Smoked Sausage Hashbrown Casserole

An easy dinner for busy nights that is a filling hashbrown casserole loaded with smoked sausage, onions and cheese.

Ingredients

  • 10.5 ounces cream of chicken soup
  • 8 ounces sour cream
  • 2 teaspoons chicken bouillon
  • 2 teaspoons granulated garlic
  • 1 teaspoon black pepper
  • 20 ounces shredded hashbrowns refrigerated
  • 12 ounces Petit Jean Smoked Sausage sliced into bite size pieces
  • 2 cups cheddar cheese shredded, divided use
  • 3 tablespoons butter sliced into thin pats

Instructions

  • Add the cream of chicken soup, sour cream, chicken bouillon, granulated garlic and black pepper right in the crock pot. Stir until well combined.
  • Add the shredded hashbrowns, sliced smoked sausage, diced onion and half the cheese to the slow cooker.
  • Stir until well combined.
  • Top with butter slices.
  • Cover and cook for 2 hours on high or 4 hours on low, until the hashbrowns and onions are tender and the casserole is hot and creamy throughout.
  • Sprinkle the remaining cheddar cheese over the top. Cover again for a few minutes, just until the cheese is melted.

Notes

  • Oven Method: This casserole can be made in a 9 x 13 casserole and baked in the oven at 375 for 45 minutes to one hour.
  • Make Ahead: You can slice the sausage and onion and mix together the creamy sauce ahead of time. Store everything covered in the refrigerator, then assemble the casserole when you’re ready to start the slow cooker.
  • Store leftover smoked sausage hashbrown casserole in an airtight container in the refrigerator for up to 3 to 4 days.
  • Reheat: Individual portions can be reheated in the microwave until heated through. For larger portions, place the casserole in an oven-safe dish, cover with foil and reheat until hot.
