Chocolate Pecan pie Bars

Ingredients

for the crust

  • 2 cups all purpose flour
  • 1 1/2 cups powdered sugar
  • 1 cup salted butter

for the filling

  • 1 cup brown sugar light or dark
  • 2 tablespoons all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2 tablespoons melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups pecans - pecan halves or pieces
  • 3/4 cup milk chocolate chips

Instructions

  • Preheat oven to 350°.
  • For the Crust: Mix 2 cups of flour and powdered sugar together in a 9 x 13 inch baking pan.
  • Slice butter into chunks and mix with a fork, pastry cutter or clean hands until butter is about pea-sized and mixture is crumbly.
  • Press into bottom of the pan.
  • Bake for 20 minutes or until lightly browned.
  • For the Filling: In a mixing bowl, add brown sugar, 2 tablespoons flour, baking soda, salt, melted butter, eggs and vanilla extact. Mix well.
  • Fold in pecans.
  • Pour over baked crust and spread evenly.
  • Sprinkle chocolate chips evenly over the pecan mixture.
  • Return to oven for 15 minutes or until golden brown.
  • Remove from oven and place on a wire rack to cool completely, at least 2 hours.
  • Slice into squares and serve.

Notes

  • Storage: Cover cooled bars with plastic wrap or place in an airtight container. Store at room temperature up to 3 days or refrigerate up to 7 days. Freeze in a freezer-safe container up to 3 months.
  • Variations: Use any kind of nuts that you have on hand, walnuts are delicious or try it with almonds.
  • Salt: After removing from the oven, sprinkle flake sea salt over the bars.
