Beef and Bean Burritos

Ingredients

  • 1 1/2 pounds lean ground beef
  • 1 onion diced
  • 16 ounces refried beans
  • 2 cups picante sauce
  • 1 tablespoon granulated garlic
  • 1 tablespoon ground cumin
  • 1 tablespoon onion powder
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 8 burrito size flour tortillas
  • 2 tablespoons olive oil

Instructions

  • Preheat oven to 400°.
  • Brown ground beef in a skillet over medium heat. Stir often, crumbling the meat as it cooks. Add diced onion and cook another 5 minutes or until onions are softened.
  • Stir in refried beans, picante sauce, garlic, onion, cumin, salt and pepper.
  • Spoon the filling into the center of each flour tortilla.
  • Roll up, tucking the sides in as you roll.
  • Place seam side down onto a rimmed baking sheet lined with parchment paper or lightly greased.
  • Brush burritos lightly with olive oil.
  • Bake for 12- 15 minutes until golden brown.
  • Serve with your favorite toppings like sour cream, pico de gallo, guacamole or homemade salsa.

Notes

Storage: Store leftover burritos in a zip top bag in the refrigerator up to 4 days. Freeze in a single layer in a freezer bag up to 3 months.
Reheat: Place in a dry skillet and cook over medium heat, cook for about 2 minutes per side or until heated through. Alternately, place on a sheet pan and bake at 350° for 6-8 minutes or until heated through.
